It may not be as easy but it's still pretty straightforward. I actually have to fight with my keyboard because it inserts spaces in my brackets and parentheses, but it's a few extra seconds at most.
Edit: shit I forgot to recommend SwiftKey! It's the only keyboard I've found who's recommendations don't choke on multiple languages. I can use 3 different languages at once and it still works great when I swipe.

Google doesn't "record every single thing you type" while using the Google Keyboard except for when you use the dictionary function (stored locally on your phone).
There is also SwiftKey and Minuum that have really good spell checking, etc.
It really depends on how big your hand is. You can download a keyboard like the one I have SwiftKey and use compact mode like this pic. The curve kinda makes it easy to hold the phone. How about you go to a local store and hold the phone in your hand? Because I can use it with one hand but my hands are the size of a soccer goal keeper hands.

Look at swiftkey the app has 100 - 500 million installs, it has a full staff of engineers, likely subscribes to outside apis/resources, and virtually unlimited access to whatever their users are typing in emails, texts, searches, et al. yet they only succeed at word prediction at a whopping rate of up to 1 out of three.
I'm not saying don't do it or anything, but you might temper your expectations, see if there is an api to hook into, get friends together and start a project. What I mean is clarify your goal, know your use case, it'll lead to a more positive experience. Not much help I know, just do your best and don't let the project get you down
No, it's a keyboard app. Its autocorrect learns the more you use it and it's very good at guessing what you're trying to say. My typing accuracy is terrible, but SwiftKey knows exactly what I'm trying to spell 99% of the time. It costs some money, but it was well worth it in my opinion.

The autocorrect functionality is provided by the keyboard, rather than Android itself. I can recommend SwiftKey's autocorrections - they're pretty dang good.

50 Thousand characters is a huge hefty text block, and in truth I have seen other people reporting slugish keyboard with much smaller, more normal letter sizes.
I imagine it could depend on what keyboard is in use as well, which people should include in their report (or they might be to clarify).
The Gboard (keyboard from Google Inc.) is a heavy, bloated tool in my experience. I use 3 languages and with Gboard and the languages loaded it got very iffy.
Switched to Microsoft's <strong>SwiftKey</strong>, a free Android keyboard, and found it much lighter and never looked back.
On the contrary, I caution people about the bloated-ness of <strong>Gboard</strong> (similar to the equally demanding Google Chrome browser - another one I won't touch).

If you can't figure out what happened, a lot of other keyboards have this feature, such as Swiftkey or Gboard - the Google keyboard.
I forgot the name of it but there's a custom keyboard you can get on the Play Store that splits the keyboard down the middle and pushes the keys closer to the sides when in horizontal view so that your thumbs can reach all of the keys much more easily. You could try that. It's honestly really great for horizontal typing on phones with screens larger than 6 inches.
EDIT: Found it. It's called SwiftKey. You can change the layout in the settings so that it's optimised for thumbs while horizontally orientated, making it a lot easier to type.
My first smartphone actually was the Samsung Omnia 7, one of the first-generation Windows Phones. My first Lumia was the 925, then I had the 930 and finally the 950. For me, the Lumia 930 was the peak in terms of design. Unfortunately, the 950 was pretty half-assed – great camera, but the design was just meh and much cheaper than the older Lumias.
For my usage, Windows Phone / Mobile did have enough app support, but of course, with Microsoft abandoning the system, staying with it was impossible. Luckily though, Android can be configured to be useful as well. I just continue to use all the Microsoft services like Onedrive and Mail/Calendar. I also have the Microsoft Swiftkey keyboard installed as well as Launcher 10 – the interface is just so much better than the stock Android one.

You can't, because that's not GBoard. GBoard possesses the little Google G at the top left corner next to predictions.
He's using Swiftkey Keyboard, which you can tell by the three horizontal bars at the top left corner.
Also, the Number Bar and Arrow Key Bars are settings inside Swiftkey that you can turn on.
I've got an Android phone and I'm using Swiftkey . It's quite the best keyboard (app???) that I've ever used.

When you say "Android Default" do you mean the keyboard that comes on the S7 or Google Keyboard?
Personally, I use Google Keyboard. I've tried to switch multiple times, even forcing myself to use swift key for a whole week, but I always end up coming back.
That being said, Swiftkey is still a great option. Otherwise, Swype, Google Keyboard, and Samsung are really the only good ones. Be careful installing just any keyboard as some can be malicious, read the reviews first for any red flags.
I have an S5 as well and for me, as well as many others on this sub, have noticed an occasional stutter / lag in the phone the longer we have it - so from that point of view, your issue isn't "unusual".
That said, I know the Samsung Keyboard has a higher tendency to lag than other keyboards. Personally I use the SwiftKey keyboard (see link below) which I think is miles more advanced (performance and stylistic wise) than the default Samsung one. Another good one is the Google Keyboard. Definitely switch your keyboard, and I think you'll see less of this stutter.

Use a different keyboard. One of the major benefits of Android in general is the easy switching of keyboard. While iOS has added user installable keyboards recently the tech is far more mature on Android.

SwiftKey. Obviously saying that it was good doesn't really do it justice because you'd have to use it, but I paid something like $2.00 for it and it served me well.
Too bad about the windows phone keyboards. I guess I'll end up getting used to it after a while. I've only had the phone about a week now.

Swiftkey defaults to staggered (albeit staggered slightly different than you'll find on your laptop).
There is no universally accepted winner. I prefer the Google Keyboard because it swipes better (and I've been using swipe keyboards for more than half a decade now). Swype used to be my go to, and SlideIT was before that (and the Sense keyboard before I got into swiping). I've tried Swiftkey many times, it's not for me.
I've bought a pack of 10+ too, but the only use I've found for it is one sticker NFC tag on my desk to switch between Swiftkey and WifiKeyboard.
I have been using Swiftkey for years on both of my Fold phones. It's highly customizable. Don't let Microsoft's name scare you. They bought it a few years back but appears they only slapped their name on the title.
I use to use swype keyboard, but they are gone now and use the Microsoft Swiftkey board. I don't type when sending messages or email, but swipe basically never lifting your finger, but only when you need to add a space after the word. I know it sounds weird, but i put a video to a link so you can see.
Hmm, I wonder if setting (Microsoft) SwiftKey as the default input method in the Android system does that without breaking anything else.
If not that, then apps like KDE Connect should help (especially if you want to keep in in your own network rather than over the Internet).

If you're struggling to text without looking at your keyboard, then maybe you need a better one? Personally I haven't had any issues with typing on a smartphone in over a decade, ever since I changed keyboards. Predictive text does all the work.

I really like SwiftKey by Microsoft. You can easily switch between languages (up to 5), and can have both number and directional keys.

That is a good point - the very common Google Keboard, aka Gboard, is a resource hog in my opinion, and best to be avoided.
The OP could try replacing it with the <strong>Swift keyboard</strong> for a test, and turning off some features is an excellent suggestion as well.

After installation, open the app and it'll guide you through the setup. When it prompts you to add an extra language, add Chinese Simplified, and separately, add the handwriting input.
Setting it up might look a bit overwhelming at first. Take your time with it.
I use Swiftkey, works pretty well, the prediction is working almost flawlessly and it has multiple clipboards (well, clipboard history)

For Android users, you might like this keyboard app, you can long tap an autosuggested word to remove it from the list of autosuggestions.
And on incognito browsing, it doesn't record typed words in the list of autosuggestions, so you won't need to remove a lot of words lol.

The stock keyboard doesn't offer a very good typing experience, there are much better free alternative on the play store like swiftkey or gboard.
I use https://play.google.com/store/apps/details?id=com.touchtype.swiftkey for the last years. The keyboard itself got more and more bloated and received features I don't use but since those are mostly hidden I still love it for the autocorrect it offers. Also I could never find a better keyboard.
My most loved function is that you can swipe across the keyboard to the left to delete your last word if you activate it.

It's the SwiftKey app, available in the play store, and I believe it's in the apple store as well, but I'm not sure. Then you go into the settings and there's an option for arrow keys.

I see the button to open the special character keyboard (switching from letters to chars), but I don't see any special characters overlaid on all the keys. For example, in Swift Key all keys have a secondary character (or multiple by press-sliding), like the numeric keys I see on Gboard.

If you are on android and your keyboard does not support this, you can install swiftkey... it is what I use and it does.
once you have it installed, bring up the keyboard and hit it's hamburger icon on the left. Then hit "More", then "typing" then "clipboard"
from here you can hit "add a new clip" for each one and set the clip content as like "ground,grass,dragon" and the shortcut as "zelectric" (no quotes of course).
the main thing, is make sure it doesn't auto insert spaces after your commas.
also make sure you "pin" each entry you add so swiftkey does not think it is temporary.
also I used zice, zrock, etc.... just easier to type...

On Android it'll depend on what keyboard you use, I've heard SwiftKey has excellent multi language support.
It also happens to be the keyboard I use, but I only use English.

Skins et paramétrage du clavier au poil près aussi (touches, layout, dimension), avec un résultat final conforme à mes attentes. Oh, et saisie vocale intégrée. Et gratos.
L'un dans l'autre aujourd'hui les produits se valent et offrent plus ou moins la même chose, le reste est une histoire de goûts et de détails. Fouine un peu sur le store, fais plusieurs essais, trouve chaussure à ton pied.
Quel que soit ton choix prends en considération le fait que plus tu mélangeras les langages, plus la prédiction sera hasardeuse. Déjà avec deux langages tu rencontreras des cas où le clavier te proposera çà ou là un mot dans l'autre langue, si tu passes à trois langages simultanés tu ne seras pas loin de devoir discipliner ta typo au millimètre près pour éviter les ornières mot après mot. Pas de surcharge donc, de préférence.

Yeah they changed that in the update. You used to have straight up access to emojis from the main screen of the keyboard. Now you have to tap the symbols key then press emoji button. If it bothers you a lot you could try switching to Swiftkey you can access the emojis by holding the return key on the keyboard or you can change the settings in swiftkey to give you a designated emoji button instead.
Swiftkey has had that for years. You should check it out if you really want that feature (it's also a great keyboard).

In all seriousness though, SwiftKey keyboard is your go-to-app (for Apple & Android) if you want smooth functionality between different languages. The Arabic keyboard is just a swipe of the space bar away and the predict function is pretty decent as well so it makes being lazier even easier than before.

I have kinda smallish hands for a guy. I'm not sure of the correct way to measure how big they are, but my middle finger is about 2.6 inches long. With my fingers spread all the way apart, from the tip of my pinky to the tip of my thumb is about 7 inches. I cannot palm a basket with one hand. Anyway, onto the phone.
One-Handed Use: Using it one handed is not really a problem for me. When I'm holding it with my right hand, I can almost reach the top left corner of the screen - it is quite a stretch. However, I can easily reach the notification shade with one hand, and operating most things one handed is no biggie. Texting one handed is super easy with SwiftKey's "Flow" (swipe your finger from letter to letter to form a word). Also I use Nova Launcher, which has gestures that allow me to pull down anywhere on my homescreen to pull down the notification shade. Without ranting on too much more, unless you have super tiny hands (as in you are a woman or a child - and even then my sister doesn't have too many issue using my phone) you shouldn't have any difficulties using the phone.
Battery Life: Aside from one handed use, I really have enjoyed owning the phone (I've had it for about a month and a half). The main complaint people have is about the battery life. I would be willing to bet that this is a very vocal minority expressing their distaste here. Most people who are happy with their phones have no reason to come on here and say "yep, everything's working just great". My battery life has been just fine so far. It will easily last me through my day (8am - 12am) and I could probably squeeze out another few hours if need be. I can almost guarantee it will out last your 4s in the battery department.
Multitasking/RAM management: Another complaint people have is RAM management. What happens here is when you back out of one app and go into another, and then go back into the first app, it will have to reload whatever you were looking at in the first app (E.g. Open Twitter, back out, open Chrome, back out, re-open Twitter - Twitter will have to reload). This can be slightly annoying, especially when trying to heavily multitask. In my experience, it only happens when I'm switching back-and-forth between at least 3 RAM intensive apps, such as Chrome, Fruit Ninja, and YouTube. And with how quick the processor on this phone is, it really takes only a split second to reload the app. It is, at least for my use, a non-issue.
Camera: The camera on this phone was one of the primary selling points for me. I truly believe it to be the best camera out on the market today. Some may say that the LG G4's camera is better, and while that may be true in some cases (namely low-light shots, if I'm remembering correctly) I love the S6's camera. Pulling it out of my pocket, double-tapping the home button, taking a photo of whatever --without having to worry about the camera taking forever to load or focus-- and then putting it pack in my pocket has got to be the most convenient thing ever. Video on this camera is also fantastic - whipping it out to shoot that funny moment has never been better for me. My cousin's daughter for example, is 2 years old. You never know when you'll want to record her at a moment's notice. Simply double-tap the home key, and your recording. I cannot emphasize the convenience of this feature.
Fingerprint scanner: This is a running theme with this phone - convenience. Press a button, leave my finger still for a second, and then my phone unlocks. Not much to say here, it works well. It does, however, not work quite as well as the iPhone 6's scanner. The iPhone's pretty much got my print right every single time, and is quicker to recognize it and unlock. On the S6, in order to have it read my print every time, I had to put my right thumb print in twice - from all possible orientations. It also seems to take just a bit longer to unlock. Rather than instantaneously, it takes maybe half a second. This isn't too bad in my opinion, but could use a bit more optimizing.
Overall usage/Touchwiz: All in all, on a day-to-day basis, I've really enjoyed using this phone. Touchwiz does still have some very slight hiccups, such as stuttering when opening my recent apps, taking a while to go home, or when going from the camera to the gallery. On a scale of 1 - 10, 1 being a laggy bumbling mess and 10 being the mobile phone version of the second coming of Christ, I give it about an 8.5. It's pretty damn good, and with some slight modifications (I installed Nova Launcher which seems to have eradicated nearly all lag I experienced), it is a very good phone and you won't be disappointed if you choose to purchase it. As an aside, the Gold version is fucking sexy.

Besides those in that list, I also recommend SwiftKey keyboard and Nova Launcher, although you might want to wait a bit before installing those. Take your time to get used to the default launcher and the default keyboard, and later try something different.

The very first thing you should know is the double tap to wake the screen and camera launch gesture (hold it in landscape and press one of the volume buttons). If you don't have any password/pin, swiping up after being picked up wakes the phone and skips the lockscreen.
Depending on where you live and what your M8 is (carrier locked or not), you may have the update for 5.0 Lollipop. The changes are mainly under the hood with a couple of aesthetic changes on certain functions like multitasking (you can toggle between the old or new UI) and the notification shade. It still runs Sense 6 so the aesthetics are largely unchanged.
I use Swiftkey Beta because I like their prediction software and simultaneous multi-language support. Google's own keyboard is very fast and responsive. Others that I have not tried but others may recommend are Swype, Fleksy, TouchPal and the weird Minuum.
What I use is the highly reputable Nova Launcher with the Rondo icon pack to get this. Other launchers include the Google Now Launcher (which is basically the Nexus interface), Smart Launcher (minimalist with categorised app lists), Action Launcher (has some interesting features), Aviate (UI is dependent on situation context) and Themer (for those who can't be bothered to invest too much in customising).
I personally use Reddit News for its UI and the way it handles comments. Other apps that can suit you fine are Reddit Sync (very similar to Reddit News), Reddit is Fun (prefers information density over aesthetics), Reddit Now (more image oriented), Baconreader and RedReader Beta.

I don't have an S8, but:
Messaging: Everything you said has, literally, nothing to do with the S8. That's how the SMS/MMS standard works. You will experience that with ANY phone that's not an iPhone, because what you're asking is why can't you use iMessage (closed Apple platform) on an Android phone. Furthermore, if you didn't live in the US you wouldn't have that problem at all, as nobody really uses SMS/MMS/iMessage at all and people have long switched to cross-platform solutions that are light years ahead of iMessage, such as WhatsApp or Telegram. So yeah, SMS' suck... as is expected from an outdated 1984 standard that is pretty much dead outside the US. The MMS standard is from the 2000's and also sucks.
Keyboard: I've never used the Samsung keyboard, but I believe you. Different people have different preferences (tapping, swiping...) but if I may suggest something: try SwiftKey and let it learn from your habits. Its predictions are miles ahead of those in the Apple keyboard (or any other keyboard in my experience), and all the friends I have who switched from Android (SwiftKey users) to iPhone actually despised the default iOS keyboard and installed SwiftKey for iOS immediately. It's a different typing experience, but once you get used to it I think you'll like it even more than you liked typing in your iPhone.
Apps: Obviously depends on which apps you use, but unfortunately that's what you get when switching platforms, and nowadays I believe it goes both ways (e.g.: I have friends who whish they had good iOS versions of some Android apps, and vice versa). I always read on reddit how US-centric apps like Snapchat suck on Android, however they're not really used over here so I can't comment. But do keep in mind that design languages (e.g.: Material Design on Android) are different between platforms, partially because UIs, hardware buttons and controls are also different... So you shouldn't be expecting 1:1 copies of any app, just like you wouldn't expect that between a Windows and a MacOS application. You need to realise you're completely changing platforms, so things should look different. The important thing is that stuff looks consistent within the platform you're using.
Apple Music: Never used it, but I'm sure it's true because Apple's apps are always horrible outside of MacOS/iOS. I'm extremely satisfied with Spotify, paying less than 3€/month for a premium subscription that gives me access to pretty much all the music in the world, instantly and from anywhere. It's so liberating not having to download, organise and manage individual files or albums anymore... I don't think I could ever go back to that. Maybe you could give Spotify/Google Play Music a try and see if you like it?
iCloud Mail: I didn't even know this existed... everyone I know uses either Gmail or maybe Hotmail from the old days, which you can both configure on the Gmail app on Android, or any other email client for that matter (there are hundreds). Can't you configure your iCloud email account on any regular email client like Gmail or Samsung Email? According to this it seems you can.
SMS backup: You can use something like SMS Backup & Restore, which does something even better than backing them up to your laptop: it backs them up to the cloud (e.g.: Google Drive), so you never lose them again. You can configure it to do that periodically (e.g.: at night) so you don't ever have to worry about it.
All in all, I would recommend at least changing your mindset and forgetting everything you know about iOS. This is a different OS, with a different platform, and things work differently. But in most cases that doesn't mean it's worse, it's just different.
Keep an open mind and try to learn the new OS instead of expecting everything to be exactly like it was on iOS... otherwise you will be permanently disappointed and you won't be able to enjoy everything Android has to offer (and believe me, it's a lot).
But if you do and you still don't like it, by all means get that iPhone 8! :D I'm sure you'll be able to sell the S8 for a decent price if it doesn't have any physical damage or anything.

I don't know how to change the keyboard language on Swipe. But what I did was: I downloaded both Swift Key and Swift Key Beta and set one to English and one to Swedish. I then used the Secure Settings plugin for the "input type" action which let's me chose what keyboard to use. I then set the triggers to different apps.
In your case you could do the following:
Profile 1 Condition: Application "insertmessangerapp" : AutoInput UI Action "Dave Task: Change your keyboard to English Again I don't know how to change the keyboard language within Swipe.
Profile 2 Condition: Application "insertmessangerapp : AutoInput UI Action "Francesco Task: Change keyboard language to Italian
There is no condition in Tasker that triggers for changing the language so I don't think it would be possible to achive "enable last used lanugage".

SwiftKey has a keyboard theme called Ninja Pro which gives you a blank keyboard. I found that I could reasonably type on my phone without the letters. Although to be fair, SwiftKey does a good job at correcting your typos and there are predictions at the top of the keyboard. I would have kept the Ninja Pro keyboard of it wasn't for the punctuation arrangement which I have not memorized just yet.

Have you tried SwiftKey yet? Besides being one of the best keyboards on Android, it has both a voice input as well as an emoji key (along with emoji predictions!).
The problem isn't autocorrect, it's swipe typing, like Swiftkey. It's so much faster and usually pretty accurate, I just can't go back to regular typing, and I put too much faith in its mind reading capabilities.

Swiftkey for me is the better option. I also need a multilanguage keyboard (I speak portuguese, english and german), and even though these languages are supported by the Xperia Keyboard, I've found Swiftkey to be a really good multi-device replacement (it "syncs" the way you type).
I chose it over others because I hate changing language input with swipes or buttons (looking at you Google Keyboard), and Swiftkey (and Xperia) detects automatically as you type, much more convenient, as I tend to mix portuguese and english a lot with my friends.

Just checked swipe and it doesn't seem like it does emojis. I would recommend swiftkey keyboard. You can long press the enter button in that one to get to the emojis. You can also theme it and have it learn from your texts and emails and such. Really good keyboard.

Swiftkey has been my go to keyboard for years, primarily because I'm so used to the "hold for symbol" feature. You can customize how long you have to hold too.
It one of the only android keyboards that can have 2+ languages simultaneous (without switch). It's on Google Play, I strongly advice you to use it.

The ability to replace launchers or keyboards is not a selling point outside the tech enthusiast niche. It's only an added bonus to those who happen to buy an Android phone (which, as I said, is a majority of available smartphones) and actually realize they can be replaced.
It's easy to think customization is huge when you browse /r/Android daily, but even SwiftKey only has "10,000,000 - 50,000,000" total downloads according to the Play Store. With 1.5 million new devices activated daily that is a tiny drop in the bucket.

I have no idea what's iMessage compatible or not because the vast majority of people I text are Android users, and I also don't think I've texted a single emoji to anybody. with that said, from my understanding, Swiftkey accomplishes exactly that you're asking.
I'd highly recommend switching to Swiftkey regardless because it's a vastly superior keyboard to anything else that exists. this isn't just my opinion, but the general consensus from everyone who uses Swiftkey virtually everywhere that Android keyboards are discussed. despite this being anecdotal, I've also recommended it to quite a few people, and every single person has loved it, especially those switching from a Touchwiz keyboard.
one last thing: as a root user myself, I don't understand why anyone wouldn't want full control over your device. root on Android is basically the same thing as having administrator privileges in Windows. if there's an easy and foolproof way to root your phone (especially something like Kingroot which doesn't take a lot of effort), I don't see a single downside to it. with some devices on some carriers, it can be a bit of a risk and/or destroy your device, and I would argue in those situations that it isn't worth even trying it. personally, that kind of thing stops me from purchasing said devices. in scenarios where there is no risk, I'd suggest looking into it.
to clarify with that last point, I don't know of any root utilities that fix your particular problem, I just personally advocate for people having full control over the things they purchase. things that restrict my access infuriate me, and I've gotten a little upset at my rooted Galaxy S4, for example, because ADB (a CLI-based recovery utility which generally has no restrictions) wasn't able to pull from it while the phone was in recovery mode, because "permission denied". if I can't pull data off an unencrypted device with a recovery utility, what's even the point of having a recovery mode?
tl;dr use Swiftkey. it's fantastic, and I doubt you'll find a single person that will tell you otherwise if they've used it at all. unless they're iPhone users; the last time I heard, Swiftkey was still broken on iOS.
