You unlock an auto battle option pretty quickly in Soda Dungeon. You setup a party, equip items, and send them off. The progression is you upgrading your tavern/base, unlocking new heroes, finding new gear, getting into new areas, etc. The game does need to be on screen, though, so it's not one that continues in the background.
It's a free game. There is an optional banner ad you can enable that gives you bonus gold. There are optional IAPs to unlock things faster, but the game doesn't shove them down your throat. I played until I felt I'd beaten most of the game and never felt like I had to buy anything to play.
Note that there used to be a couple bosses that you'd have manually fight. Like the auto battle AI had trouble with them. But after you beat those, you could start after them.
One that will continue off screen is Clickpocalypse II. You make a party and off they go. You can check back in later and equip items, level up heroes, etc. You progress by beating dungeons - which you can then buy and turn into "farms" that earn you resources. You unlock new heroes and can earn permanent upgrades. If you beat all dungeons you can replay with a new party or continue into a harder game with the same party. The game is free, no IAP, there are optional ads that buff your party for a couple hours if you want to use them.
The game's title implies you tap a lot, but you really don't. If you want to watch the screen and tap to cast spell scrolls you find, you can, but it's optional. I unlocked all the different heroes and got most of the achievements without manually casting a lot of spells.
Very early into Soda Dungeon you get the ability to automate combat. So you can just send your team out and collect loot later.
You change the party composition, do upgrades, pick gear, etc.
A banner ad displays when automated combat is going. There are IAP if you don't want to wait to earn things. I played this awhile and got almost everything, except one or two pets, without doing any IAP. So it's not one of those games where you have to buy anything. It doesn't have a stupid stamina or timer thing making you wait.
I do want to note that there are a couple late game bosses that you will have to fight manually. It will take awhile to reach those, though, and after you've beaten them, you can just start your party after that boss, if you wanted.

"incremental" is terms sometimes applied to these types of games. "idle" is another one. But it can be hard to just search for those terms and find what you want. Try checking out r/incremental_games. They've complied lists of different games for many platforms. That's where I originally found Clickpocalypse years ago.
Also, thought of one other game: Soda Dungeon. You make a team and send them off, lots of upgrades to unlock. You very quickly get the ability to do auto combat, although this game does NOT keep playing in the background. I would play this game by setting up the party, equipment, etc and then have my phone running on my desk while doing work. Then later check back, collect loot, do upgrades, change the team, etc.
Soda Dungeon is free with optional ads you can choose to have displayed as small banner during the dungeon to get extra gold. There's IAP if you want to unlock things faster, but I was able to reach a point where I felt I had beat the game without feeling like I had to buy anything. Note that there at least used to be two bosses you had to manually fight, as the AI couldn't handle them before. Not sure if that's still the case. It wasn't too big of a deal though, you'd beat them then just start at a point after them.
I dunno about best, I don't play a lot on mobile because of the large amount of terrible on mobile. BUT I would love to pick up some great new games in this thread so I'm gonna submit Soda Dungeon. Its an idle/incremental game, but one of the most involved I've ever played. If you want to play it like a turn based JRPG you can. And the loot/combat loop is excellent. Unlocking new heroes to outfit with new equipment and take on new baddies... classic JRPG stuff. Just a lot simpler and no story to boot. (Let's be honest some of those old JRPG stories are trash anyway.) Its free to play, I paid to remove the banner ad across the bottom but mostly because I absolutely thought the game was worth whatever it cost. Its between 1 and 5 bucks.
It may not be exactly what you are looking for, but you can set the combat to "auto" in Soda Dungeon very early on. I rarely did any of the combat and played the game as a hero manager type of game. Free game and while therpe are options for in app purchases, I just played through and got every achievement without buying anything.
edit: I should say that you are going to have to fight the boss of level 500 yourself. All other bosses, including the stupid level 700, can be handled with auto combat.

Turn based, RPG-like attacking that you can set to auto-battle.
Gear collecting.
Have to use certain classes to get past certain bosses.
After you beat 100 levels and the boss, you have to reset like in an idle game. You get relics to upgrade.
Etc.
Another bonus is the author isn't big on ads.
There's a short ad after most runs (unless it was a really short run). Later on, you can buy an upgrade that removes ads from the game (Remember, this is a free game. I don't know too many free games that let you do that.)
You can also choose to watch one every now and then for bonus money and essence.
If you try it and like it and you want to support the author, buy the Magic Clock (It's like a couple bucks). Your gameplay speed pretty much doubles. Win-win. You get more done faster and he gets a little income. Not trying to be a fanboy, but I really like his game's business model and wish more people did it like this.

(revival) Puzzle Royale - Match 3 with summoning. It is interesting to me yet again after months because I found out they added PvP
(played for a while) Autumn Dynasty - Good strategy that I got from a sale, but I don't have much time to play it, so I'm mostly just eyeing it and skipping. But it's a good game.

Tiny Guardians - very nice adventure/tower defense game
Bloons - Tower defense with some sort of co-op multiplayer. She's been playing this forever now.
Why isn't Soda Dungeon at the top, great time waster
Here's a couple that I've played that I enjoyed.
• Soda Dungeon. You run a tavern, recruit heroes, setup a team, and send them off. Afterwards, you can buy upgrades for tavern, do level ups, equip items, etc.
Initially you need to actually do the fighting, but you'll very quickly unlock an auto fight option. You can choose to turn that on to make this basically into an idle game. This game does need to be playing on your phone for it to be going. So if you go to another app or lock the screen, the game pauses.
Free game. Last time I played there were optional banner ads you could choose to have displayed during the dungeon run for extra gold. IAPs were optional to unlock things faster. I never felt like I had to buy anything.
Finally, note that last time I played there were two bosses on certain floors with special mechanics that gave the auto fight. So you'll likely want to fight manually those two. You can choose where you start your run, so after you beat one, you can choose to start your next run after that boss - letting you idle away again.
I don't recall if this had a "rebirth" thing. There were new areas you could access through portals, but it took a long time for me to get to them. Edit: now that I think about it, it's possible the portal had you start over with a new tavern.
• Clickpocalypse 2. Make a team of heroes, send them off, then check back later and do level ups, gear, etc. This one you don't have to really do any combat, but you can optionally tap on spell scrolls your party finds to help them out. Like if you check back and they are having a hard time on a boss or something, you could choose to throw some lightning bolts at it.
This game play can progress entirely in the background. When you check back in, it figures out what would have happened and loads up. This one does have a new game+ type of deal, so it might not be what you want. You can either continue with the same party or make a new one. There's new heroes to unlock and some upgrades that are permanent that will carry over to a new party.
Free game. No IAPs at all. Ads are completely optional, not forced, and you can choose to watch one for a buff.
• Merchant. Run a store, hire heroes, send them on quests. Quests can take awhile, especially later in the game, so you can just check back later. When the heroes return, you use the things they found to craft gear to equip them and make stuff to sell.
I don't recall this having a rebirth thing. I played up until the fire area, which was the fourth or fifth area and had unlocked most of the heroes. At the time I played, which was awhile ago, that was kind of the end game. I understand there's more now, though.
Free game. Last time I played there were optional IAPs for cosmetics and I believe there's now an IAP expansion. Play Store says ads, but I don't remember ads.
• Logging Quest 2. This one also has your making a party and sending them questing, but there's a system where you can choose their actions while they are on the quest. It's stuff like, this tank character should use a health potion when they are below this much life and this caster character should use a magic potion, etc. So this game is a bit more complicated than the others I mentioned.
The quests can take awhile to complete and the game will play in the background. So you can set it up, send your party off, and check back later.
Free game. No IAPs, has Ads. I don't know if this has a "rebirth" thing. I never got far enough to see it, if the game does.
Check out SwarmSim and Midas Gold. I spent a TON of time on both of those.
SwarmSim is one of the most enjoyable idle games I've ever played.
They're both completely free to play and I highly recommend both.

/u/Afro-Ninja (the dev) actually gives a damn about his game and his users. He actively participates in the subreddit, produced a legitimately fun game, is very relaxed on "ads", and is in the process of making Soda Dungeon 2 after Soda Dungeon 1 blew up and became successful.
Think final-fantasy style combat, lots of different gear, like a dozen classes with different skills...and you work your way through levels of a tower and through different dimensions.

Some fun free games. None of these have stamina, timers, or other junk that forces you to spend money to play the game:
Soda Dungeon, run a tavern, upgrade it to recruit better heroes, send them into the dungeon to get better gear and money for more upgrades. I found the IAP to be completely optional. There is an optional banner ad for extra gold, which I would turn on when doing automated combat.
Pixel Blacksmith, run a blacksmith shop, craft items, sell to customers, level up to unlock more stuff, buy from vendors, hire workers to gather materials. Optional ads to do things instead of paying for them, like making a vendor restock immediately. If you like the game, there is a one time $2 IAP to unlock a new game plus mode. Visit r/PixelBlacksmith if you need help.
Pixel Dungeon, rogue like dungeon crawler. This game has a learning curve and you will die, repeatably. Completely free, no ads, the IAP is there just if you wanted to donate to the dev. r/PixelDungeon and there have been a couple spin offs like Shattered Pixel Dungeon.
Radiant Defense trippy tower defense game. Actually pretty hard at times. No ads, IAP to get certain weapons (and more levels? it's been awhile...)
Flow Free puzzle game where you fill in all the grid while connecting different colored points. Starts out easy and gets more difficult as the playing area gets larger. There is a crazy amount of levels -around 1,000 - in the base game. Small banner ad at bottom of screen, occasional ad between levels that you can immediately closes. Optional IAP for more levels, which also disables all ads. There are also two more games in this series, Bridges and Hexes. Each also having around 1,000 free levels.

It's an ios and android game. It's honestly one of the more enjoyable games I've played in a long time.
I stopped playing because it was taking a long time between updates. If you've never played it, I'd suggest doing so.
The guy is awesome about giving an option to completely turn off ads (this is a free game remember) and not nagging for likes and ratings. That's what got me to actually try it. The game play kept me around for quite a while.

Soda Dungeon. It's addictive as hell and actually pretty fun. It has a lot of replay value since the way you progress in the game is essentially clearing all of the dungeon, then moving to a new dimension to clear it again, except this time it has 100 more levels. No "stamina" or anything. You can progress at whatever pace you want to and it's 100% free.
Ridiculous Fishing. It isn't really an RPG, but it's a whole lot of fun, especially if you don't commit much time to it at once. I'm sure it would last you at least a few weeks of gameplay if you only played a few minutes at time. Going for all the achievements and catch every fish can take quite a bit of effort.
FFT: War of the Lions, obviously. It's great. I actually bought it twice, on both my iPhone and then again on my Android. It's the original FFT, but with a lot of extras, including new characters like Cloud and Balthier even. Definitely worth the play through, and then even again to do all the side stuff you may have missed that was tied to specific dates.
Hearthstone. Not an RPG either, but if you like strategy, you should give it a try. 100% free to play (unless you want to buy packs, which, let's face it, you probably will want to if you get into it) and right now you get free packs from the new expansion. I'm not sure how long the promotion is going on, but you can get up to 13 free card packs from Whispers of the Old Gods. So, it's a great time to try it out. I didn't think I'd like it, with it being Warcraft-related, but I was absolutely wrong about it.
Shadowrun, Shadowrun: Dragonfall. Any of the Shadowrun remakes are good. They're isometric tactical games, like FFT, and they're some of my favorites story- and lore-wise. It's a really cool world and there are at least 2 games I can think of available for Android at the moment.
XCOM: Enemy Within. To be honest, I bought this one and then my Xperia couldn't actually play it. It kept crashing in the first mission and would outright refuse to load sometimes. But, I have played it on PC and it's a great game. So, I'd say buy at your own risk of it possibly not working, but it is a fantastic game if your phone can play it.
Baldur's Gate. One of the first D&D video games. It's Diablo-style gameplay and a pretty heavy RPG, especially for a phone.
Chrono Trigger, yep, that's on Android too. If you haven't played it before, I strongly suggest you give it a play.
All of these games can be saved/paused mid-play as well, so if you want to start it up for 5-10 minutes at a time and pick up, you could do that.

A free game where you upgrade your tavern is Soda Dungeon. You earn money to do upgrades by sending heroes into a dungeon and finding items.
If you didn't want to do the combat, you get the ability to automate combat while a banner ad is displayed. There is IAP, but it isn't forced down your throat. I found it to be optional and didn't need to use it.
A paid game where you gather items to upgrade your base and craft great is Crashlands. This is hack and slash combat to get some of the items, so if you aren't interested in that, this may not be a good choice. No ads, no IAP. There are a lot of levels and tons of gameplay, but a common complaint is that the game gets repetitive.
A paid game where you run a brewery and upgrade equipment, recipes, and staff is Fiz. This is a management sim where you sell your crafted items to earn money for the upgrades. Premium, no ads, no IAP. Plays like a Kairosoft game, if you are familiar.
Speaking of Kairosoft, they have a bunch of different games where you upgrade all sorts of things. These all should have a free/lite version if you wanted to try first:
Game Dev Story, run a studio, release games to earn money, upgrade staff, no combat.
Dungeon Village, build a town, recruit heroes, upgrade all sorts of buildings, automated combat.
