Another idea: just your clerics go adventuring. Managing different types of heroes could be overwhelming for development and theme, so maybe your clerics just sometimes head off with a customer for a quest and either level up or die (risk/reward). Happens sometimes automatically, sometimes by player choice depending on p e r s o n a l i t y.
Merchant doesn't have the shop customization and is more focused on the adventures, but is way more friendly to free to play players.

I haven't really found anything that's like Logging Quest. Most of the other idles are endless grinders with no real penalty if your team dies, so you just let them run and check every couple of hours, change whoever they're fighting, ignore the game for a few hours, repeat.
Merchant is somewhat close in that you send people to fight monsters with no input from you once they depart and they can die, but there is a lot more of an active side to the game in terms of crafting things for them to wear and things to sell. You eventually unlock skills for them to use and different tiers of monsters to fight and gear to craft. There are some bosses where more than one unit can participate so there is some strategy potential too.
Been playing Merchant for bit, but it's lost it's luster to me and I'm looking for something with a little more depth. Someone on here recommended Holy Potatoes! A Weapon Shop?! and that was fun for awhile too but also hit a wall in the mid/late game.
Looking for a new idle-ish game with typical RPG elements (classes, gear, crafting, etc). I love games that involve more character/resource management and theorycrafting but are relatively idle when it comes to the questing/progression side of things. In addition to the games above I really enjoyed Fallout Shelter or even something like WoW's garrison if that helps describe whatever genre I enjoy. Can be F2P or paid if it's worth the purchase.

If you're looking for an incremental game game for android that is not a clicker game (although it requires a lot of tapping), you might be interested in Merchant. I love this game and it recently (last week) got a huge update which rebalanced the entire game and added skillpoints to your characters.

Merchant, maybe? You send people out to fight things to get materials that you then use crafters to turn into weapons/armor/potions/etc that you can equip to your mercenaries, or sell in your shop to customers instantly or basic sell after a set amount of time.
Not the best elevator pitch, but it's a game you can keep active with in terms of queuing things to complete and immediately stop with no adverse effects. There's a lot of waiting but where I am now (still fairly early) it's largely waiting one or two minutes for enemies to die and maybe five for things to craft and sell. It's also somewhat busy since once you get several mercenaries, they all can kill different monsters which give different materials which craft into different things, and as you're doing one thing something else is finishing and so on.
It's not really grindy (except Jeweler since I sold my jewels when they came up before Jeweler was a thing) but you level up not only the mercs, but the crafters and even the customers.
I've been playing it for a couple of weeks now and I like the "engaging but not begging for your attention" aspect of it. I can play as much as I want and when I'm done, everything'll still be there ready for me to address it.
Pretty much exactly this, you can hire and equip heroes with all sorts of items. You run an RPG merchant shop basically and send heroes on quests that take a certain amount of time, the time gets longer the more you progress.

If you're willing to give a mobile (but not even remotely microtransaction-y) game a go, check out Merchant. It is 100% exactly what you describe, and is a genuinely enjoyable game!
You take the role of a merchant who starts by hiring one hero of a class you choose from mage, warrior, or rogue. You can hire more over time, too. You can make equipment for them and send them on missions, and they will bring back materials gained from defeating the enemies. You use those materials to make them better equipment or potions, or just sale goods that you can sell to buyers.
It is very much a management game, so no direct action-y gameplay, but I can't think of anything that matches your description more perfectly, and it really felt like a game the developer put a lot of passion into. And as mentioned it is actually a really fun game!

Merchant !! Easy one-handed play, it's an idle game so you can stop/pause/save at any time, enough depth that you can play as much/little as you want and feel productive/engaged. Loads super quick, and the IAPs are all permanent unlocks (no gems, etc)
Looking for a browser game that is similar to Merchant on the phone. One with a similar progression of training and fighting new monsters for loot for crafting better equipment.
This is probably motivated by my new love, Valheim, and its similar feel of progression.
Anecdotal support from me on that as a sometimes-cheater on single-player mobile games.
I've frequently spent money on Merchant and time traveled - undercutting the core mechanic of the game, waiting.
I love the game, that's why I cheated actually - I wanted to explore more of the game and break the mechanics. I wanted to know exactly how you cheat, and what you can do when you cheat, and see things that could not be achieved through normal play. I wanted to test things, see exactly how the mechanics tick. It was fun, and part of what made me get my money's worth - part of why I spent more money even after cheating.
I'd strongly recommend trying Merchant out on Android, and trying out Merchant Heroes.
Both games feature things that can't be undermined by cheating as well, at least not as much, or is still useful to a cheater. Merchant has expansion packs as the main draw, rather than buying in-game resources. Merchant Heroes is still pretty early in its life so probably will get expansions at some point - but for now it uses relatively time-locked currency that can't be time-walked for. They also offered an exclusive item that, again, can't be time-walked for.
Even if they didn't offer anything exclusive or useful though, I just really wanted to support them because I like them so I gave them my money partly because I've been able to enjoy the series massively more due to cheating.
If they had cared more about the game being cheat free, that would have not really helped anyone - while making my experience less fun and likely getting less money out of me too. If they didn't let me cheat, I probably wouldn't be recommending it to you guys right now.

You may like Merchant. Somewhat similar concept. There's a subreddit r/merchantrpg if you'd like more info. Free game, last time I played there was some cosmetic IAPs that didn't effect gameplay. Looks like there's an expansion now - that's probably an IAP. Once you've sent your heroes on missions, you can basically close the game and check back later - like logging quest.
All of these games are similar to idle games, in the way you send your people on quests and check back later.
You might like Clickpocalypse II, which is an idle game where you setup a party and they go off and fight. You can check back in later to level them up, assign talents, etc. Completely free game, has optional ads you can choose to watch to give your party a buff. There's a lot of replay through different unlocks you earn by playing. The game has some spell scrolls you can tap on, which is where the click part of the name comes from, but you don't really need to do that. Occasionally, I'd check back and use the scrolls on a really hard boss. This game also keeps going while closed, like the others.
Just out of curiosity, what is Merchant? The only things I found after a quick Google search were this and a bunch of financial apps.
There are some games that allow you to watch ads to get some form of compensation, as opposed to having them pushed on you. Merchant is one of them.
PuzzleWars seems to be a bit like Puzzle Quest and has zero ads that I can tell.
Another thing to keep in mind is that some games can't pull data for ads if you disable wifi and mobile data, thus you have pseudo-adblock. It's not the same as setting airplane mode, so you can still receive calls and texts this way at least. You just have to remember to leave both off when you play whichever game, though.
Or root if you're willing to take that risk/do the research.
Check out Merchant. It's not amazing, gameplay-wise, but it's a nice time-sink while waiting for the bus or whatever.
I would say Merchant would be your best bet.
It's a great incremental (sort of idle) game, that does not require you to prestige. Although it has received quite a large update recently which added skill points to your characters and a way to prestige them, but I've been playing this game for a few months now and I haven't even gotten close to that point yet :)

Hey guys, I have been playing few months Merchant RPG (https://play.google.com/store/apps/details?id=bearface.games.merchant) And I just recently discovered Pixel Blacksmith (https://play.google.com/store/apps/details?id=uk.co.jakelee.blacksmith) I enjoy a lot of those two but I am looking something similar to waste my time meanwhile when all my chars in those two games are questing & crafting. I am looking something where you level up, craft stuff, upgrade stuff, (maybe can prestige) and send my chars to do stuff with one click and wait for them to return so I don't have to be playing 24/7 and preferably low resolution pixel graphic games. I am not sure but maybe these kind of games are called incremental games, idle games or crafting games. I tried to google, but I didn't find anything good yet. Any recommendations? Thanks!! :)

I've really been digging Merchant. It's completely free with no ads. The developers have been really active lately and it's become the perfect game to just check in for a few minutes then moving on to something else.
Triple Town is my other offline go-to. It's a bit pricy to unlock infinite turns, but honestly, I found it worth it once the addiction set in. If you just play a little bit every now and again, however, you can play it for free indefinitely.
There's Merchant. You can't directly control your heroes, but you can send them on quests to get loot so you can craft items and armor for them or the store.
Crafting is worthless? Crafting in this particular game or crafting in general? In Merchant crafting is essential. Regardless of your characters' levels if you don't have good gear they'll die and you'll have to sink money into rezzing them which sets you back a bit towards hiring new heroes. If you mean crafting in general, there's this one guy who just bought a 70 million dollar house from crafting.
It's wait, or pay to not wait. That's how these games work. This is how they make money.

Any free RPGs or other games with good controls (not a fan of virtual pads) that can be played offline?
I've been playing a couple or downloading them and trying them, so this is what I've found. Granted they're not all RPGs because I like some puzzle games too.
Merchant has been stealing a lot more of my time than I'd like to admit. I'm still pretty early and not devoting too much time to it despite what I said above, but it's very easy to check something and spend about ten minutes setting up actions and so on.
Inflation RPG is just a weird game. You wander around a field area with boundaries set up describing what enemy levels are at, and you get into random encounters that play out automatically and you level a whole bunch--and then you get to allocate stats so there's some strategy here. You're given a number of fights to get as high a level as you can, and then you start over but not before using the gold you amassed to buy items and other upgrades for the next toon.
I also tried the above dev's Tower of Hero. It's pretty much a clicker game but it's at least structured differently. There's a tower that grows as your manually-summoned heroes and the auto-summoned soldiers spawn and kill monsters and climb up, and you use the gold they drop to power everyone up and get upgrades to set the spawn point up further in the tower. Somewhat interesting since monsters respawn and they can impede your allies, but I didn't keep it. I put enough time in Clicker Heroes on PC, though the change in how this is played was nice.
Another clicker was Automatic RPG. It seems kinda silly but it's an okay time waster. No nags or anything so that's cool. Tower of Hero and this game seem to have sprites from another game or another resource--I'd like to find where they came from. Deck de Dungeon seems to use some too.
I've been playing The First Tactics Free off and on. Strategy RPG, basic presentation, horrid translation though. There seems to be an energy system but I didn't play enough for it to be an issue, and so far it hasn't bombed me with ads (but I'm playing an older version so maybe...).
I've also been working with /u/polytopey to get their Raid Tactics to work on my phone since it seems up my alley, but my phone won't have any of it. Amusingly enough, my tablet from 2011 runs it no problem apart from being extremely slow. Tech just has to be difficult, huh.
I've briefly dipped my toes into Gacha World, surprised that it actually is offline. It seemed all right, but it was incredibly laggy at points.
I got The Enchanted Cave for free a long time ago and only just now got around to it. Rogue-like, part of the strategy seems to be picking your fights since monsters don't move (so far), so it's a question of saving up your health or taking on a monster for the chest they're guarding.
Literally today just tried out Age of Strategy and Age of Fantasy. There look to be a lot of maps and while it's turn-based, you generate units ala Advance Wars I guess? Which I never really played. We'll see how those go too.
For non-RPGs...
I tried Delight Games (full library) out for a couple of pages. I like how they mention that playing offline gives you ad-free, and while you have access to all of the books of the paid version as far as I can tell, you have to go through the series from the beginning and score well enough to advance to the next. We'll see if I have any issues with that.
Ambar's Fate is another gamebook RPG thingy. I got a few pages into it the other day, but it's just one story it looks like.
I ended up playing more of Transmission than I wanted to for a first look. Connect nodes to complete the missions, but they gradually add new rules and then start adding additional mission-clear starts, so that's cool. Some of them get a bit tricky and I'm only on the third world!
I did a little bit of ColorHex last night. There are two modes, and both of them have you fill the board in the requested pattern. In swap mode, coloring panels replaces the prior ones, but mix mode mixes the colors together. It looks hard.
I honestly got Simon Tatham's Puzzles just for the network game (rotate tiles to connect all nodes to the power station). There's more there, but yeah.
As for other games I've had before...
Galaxy Hero is an RPG crossed with a shmup, though not the danmaku/bullet hell of today. It's sorta like the older games, like Raptor Call of the Shadows or Tyrian (even taking sprites from the latter), and it's pretty ugly/basic-looking and unfinished but there's still quite a bit there. I like it.
Doctor Who Legacy is a Puzzle and Dragons alike (I think) but at least there's no stamina and you can play offline. The devs added ads to the game some time ago, though they only come up after finishing a mission. You don't need to know anything about the show to enjoy this, though it seems pretty grindy. Not a fan of how purchases on one device don't transfer over, but that's probably the norm.
Match 3 Quest is another one I used to play on my tablet a long time ago, and it still seems nice. It plays a bit closer to Puzzle Quest than PvZ, though you still have separate team members who can be targeted and everyone has a special attack that automatically activates when you match gems matching their color. It's only asked me to download data once but we'll see if it asks again. There's a small nag to get your friends playing too but it so far hasn't gotten in the way. Much faster-paced than DWL.
And I keep Puzzle Wars on hand even if I don't play it much. It's yet another gem-matching game, but it seems to focus more on building combos with falling gems than trying to get more than three pieces matched like in the above two. There's equipment and spells, but I remember the translation/story was kinda okay.
ChuChu Rocket was pulled from all stores but I keep the version I bought from Amazon on my phone. I never got to play the Dreamcast original, but Puzzle here was pretty nice. You have a limited number of arrows to use to guide the mice to the rockets, without letting a single mouse die to a hole or a wandering cat (or let the cat on the rocket because seriously). There were a bunch of maps and some of them were damned hard to figure out too. Really wish Sega would make a sequel and have a stage builder feature or something.

• Fiz - paid, no ads, no IAPs.
• Alchemica has some match type puzzles for crafting and dungeon aspects with the store stuff, so might not be what you're looking for - free with ads.
If you liked the idle part where you equipped things, sent your heroes on quests, and then checked back later, then you might like:
• Logging Quest 2 game plays in background - free with ads no IAPs.
• Clickpocalypse II game plays in background - free with optional ads, watching gives a bonus.

I cannot stop playing Merchant on my phone throughout the day.

I randomly decided to reinstall Merchant the other day for some reason. Since I got rid of it before the cloud saving update, I had to start over.
Merchant is partially an idle RPG mixed with store management and crafting. You buy a hero to go kill things in the wild, then use the materials they bring back to craft items, and you can then equip your heroes with those items as well as sell them in the store, though everything takes real time to finish with the higher tiers demanding longer to finish. Customers can show up and offer to buy specific items immediately, and you can low/highball them to affect your received/spent gold as well as their own received EXP amount.
Customers and crafters level up and can offer/create better-quality items with some of them having affixes that add stats or so on. Heroes at level 10 or higher can use Skills that change their behavior in battle and this is essential for some boss battles since they too have Skills that they use in a set pattern.
The game can be played entirely offline, but there are weekly bosses and daily orders that can only be found while online. There are IAPs for boosters as well as pay-to-skip things you'd otherwise unlock with gold, and there's an expansion you have to pay to receive. I believe the ads are opt-in too and you get a small amount of gold for viewing them.
You play at your own pace, though there are notifications about crafting finishing, customers showing up, heroes finishing their kills, etc. It's very busy work in the early part because things finish so quickly, but you're also trying to scrounge up enough gold to buy more stock/selling slots and heroes. Everything from fighting enemies to building items costs gold (though selling thankfully doesn't), so this might appeal to people who want to find the most efficient route to get the most money.
Also, Merchant's downloads got shot a bit due to some quickly-fixed issue, so I'm arguably helping there!

Merchant RPG has been lots of fun for me so far.
Couple more suggestions that are separate from my other comment:
Spells need cooldowns. The ability to constantly spam every spell feels unhealer-like. Making spells stronger and limiting their uptime makes them feel more powerful and important.
Adding a global cooldown could be something to consider as well. Helps slowdown the game and gives you a little more time to think what to cast next.
I know you mentioned graphics. Something that stands out to me is when the game has all different kinds of sprite sizes. Like when you can tell that an image was up or downscaled 20x's and looks out of place. A game that does this well is Merchant.
I don't like the word "Quit" on the screen at the end of each battle. It confused me at first because I thought I'd lose progress pressing it. And it's just a negative word that doesn't actually describe what it's doing. It should say "Map" or "Worldview" or anything else, really.
More wordplay, but the word "Play" on the bottom in green sounds... meh. It should be "Battle" or "Fight!" or another word that doesn't sound like I'm about to go jump in a sandbox.
Buffs need to be a bit more visible IMO.
It really just feels a bit too fast as I'm progressing higher and I get more members. Its actually a bit stressful.
I think some on screen notifications, such as "Lava Burst Incoming" to let you know when enemies, or maybe just bosses, are going to do their hardest hitting moves, would be thematically cool to have. So you have a second to prepare. In my mind it would be like the Deadly Boss Mods in WoW.
I feeling like going from fight to fight should feel like you're moving through a Dungeon and the battles should feel more seamless between eachother. It feels a bit arcadey right now. Like "Round 1 Fight! Round 2 Fight! Round 3 Fight" when, IMO, should feel more like youre chaining packs in a Dungeon. Having the score pop-up every fight kinda pulls you out of it. But that may just be your intention.
Got work in the morning so I can't go further atm. I plan on getting back into Classic WoW as a healer in a few days so thats what drew me in to your post. Just from my brief time playing it, for me personally it would have to be a much slower game. I think fights should be longer, without a constant "oh fuck we're all going to die" amount of damage incoming. I think if you resembled a few of the QoL aspects from a WoW UI + mods, that you'd have a really good, and honestly, unique type of Single Player experience.

Try Merchant on Mobile if it has an appeal on your taste.
I'm not a huge fan of it myself, but Merchant seems like it might be right up your alley.
Not quite sure what a Shop Management game is. Is that like Merchant or Recettear? Where you have a shop that you sell your surplus at? Or like Assembly Line where it takes place in a work shop?
Merchant is a grear game if you're into incrementals.
There's stuff like:
• Merchant where you hire heroes, send them on quests, and use the items they bring back to craft items. Free, ads, IAPs we're optional for cosmetics and an expansion last time I played.
• Pixel Blacksmith - crafting and running a store. Later you can recruit heroes and send them on quests. Free with optional ads, watching gives a bonus, $2 IAP to remove ads and add new game+ mode.
• Fiz - You're running a small brewery. Similar to the classic Kairosoft games. Paid, no ads, no IAPs.
Then there's the aforementioned classic Kairosoft games. I've got a soft spot for Dungeon Village. You make a town and recruit heroes. Paid, no ads, no IAPs. There's also a free, limited demo of this.

If you like games with crafting, you might like Merchant. It's free, cosmetic IAPs, and I honestly don't remember the ads. I think it was an ad for a little reward. Pretty sure it was optional and the game plays offline fine anyway.
You hire heroes, send them on missions, they find stuff you can craft into items to sell or gear to give heroes. The missions are time based and early on are very quick, but high level take awhile. So you can just check in when you want and send them on new missions or do some crafting.
Another one is Clickpocalypse II. Completely free, no IAP, there are optional ads that give you a temporary buff. Completely optional and you don't have to use them. Game plays fine offline.
You create a party of heroes and send them off. They'll go out and try to clear dungeons. I would just check back every once in awhile and the game would figure out what had happened during that time. I think the default time limit was up to two hours, but it could be upgraded to a longer time. The game can be in the background or closed and it will still work, as it's based on time passed.
You level up heroes, pick skills/talents, equip items, sell items, buy cleared dungeons for gold - which turns them into "farms" that earn you a second currency that's based on number of defeated monsters, get access to new areas, select permanent upgrades that exist between multiple play throughs, etc.
If your party makeup isn't working, you can restart. But if you beat everything you can unlock new hero types. You can then either make a new party or continue into a harder game with your current team.
You can optionally watch and cast spells from scrolls that they find, but you really don't have to. I think that's where the "Click" in the title comes in. I went through the vast majority of the game without manually casting spells. Sometimes I'd check back in and they'd all be getting knocked out constantly by a boss, so I'd fire some spells to help move them along.
Also Merchant might have some of what you want.
So you've got ones where you aren't really involved with the combat at all. Games like Merchant, Logging Quest, and its sequel.
Then you've got ones that may not be exactly what you are looking for. Soda Dungeon let's you set an auto combat very early on. I played the game as a manager type of game. Just did the team make up, items, upgrading base, etc. You are going to have to manually fight the level 500 boss, though. It's a free game and while there are options for in app purchases, I just played through and got every achievement without buying anything.
I don't see Merchant mentioned, probably my personal favorite Android incremental (though I haven't played a ton)

Puzzle Forge is nice but Puzzle Forge 2 is even better.

And while I'm ahsamed to admit it, especially since I bashed IAP social games in this thread, I did enjoy Shop Heroes for quite a while...It is a p2w timerbased socialgame. So pretty much everything I hate. I actually don't really know why I played this but I would lie if I said I didn't have fun with it.
Actually there is a better game that is quite similar to Shop Heroes: Swords and Potions 2 but it's a browsergame
Fiz was really nice, but here we are drifting more in the manager section.

All 3 are free and without IAP's but none of them are much in the gameplay department. Not really in the same genre of building sims but if you want games that play themselves out while you're away you could do a lot worse. I myself play all 3 daily. Merchant I play throughout the day while the runs on Logging Quest 1 & 2 last for hours at a time and I enter commands maybe once or twice a day.
It's 100% free and it's my new go-to on my phone.
Merchant RPG has idle mechanics as an RPG and requires minimal clicking.
Requires patience, though.
I feel a little silly because I just mentioned it in another post but I'd recommend giving Merchant a try. Definitely inspired me in a lot of ways, if I was a mobile game dev that's probably the first game I'd practice making mechanics from since it's very simple in terms of control (just tapping and maybe some swiping, but nothing crazy) and has a fun core conceit. Retora's follow up, Merchant Heroes, is as the title implies - like Merchant but more from the perspective of the heroes.
Orna is pretty cool too, especially if you can get outside safely. The same dev also released The Gauntlet recently which I think is a bit unpolished by comparison but still is quite interesting and fun.
As for advice I'd recommend starting very small and not putting pressure on yourself to make anything noteworthy yet. Build up a toolset that you can use to solve problems, find resources that you resonate with, and enjoy yourself.
Merchant. It's an active game in the sense that you're constantly crafting, selling to customers, and sending your heroes off, but it's idle in that you're waiting on timers. I actually found Merchant while in the same situation as yours where I wanted a break from a few tappers I had been playing. It was a much needed and enjoyed break.
