Alright, I'ma lay a few on you guys. I consider myself an app connoisseur, so making this list concise was a little tough, but I really didn't add anything I don't either use regularly, or found uniquely useful.
Edit: Someone got upset that I put "known" apps in this list, so I separated them out below. Keeping them because they are still worth exploring, and someone (new) will inevitably have not known about some of them.

I know Bitwarden is the darling of the Internet but I find 1Password more suitable
Similarly opinionated, I love Podcast Addict and I've tried quite a number of them -- but I recognize that, just like with password managers, different folks value different features
I enjoy Paprika because it has support for making grocery lists from recipes and can even import recipes from webpages on mobile
The horribly named Stack is growing on me
I switched from Google Keep over to Joplin and it's a little rough around the edges but has frequent releases that seem to improve things
And then I have a bunch of F-Droid apps, but an special shout out to Foxy Droid which absolutely spanks the default F-Droid client

I would pay a lot more than I did for 1Password, which I use for reading my "standalone" vault, as I don't have a 1Password.com subscription
