I use a dash cam for every journey, even a 5 minute trip to the shop. I was in a crash a few years ago which was not my fault, didn't have a dash cam, took 2 years to get cleared up in court (100% liability for them), but this dash cam footage almost certainly would have cut out a lot of the bullshit towards a resolution a lot sooner.

I have a dock and charger for my phone in my car, I just installed DailyRoads Voyager on my phone and I just hit record every time I start the car. Takes about 7 seconds of setup before my journey but it's worth it. My car streams all my music via bluetooth even when the dashcam is running, it's perfect.
I'm still using a Samsung Galaxy S4, it'll look even better with newer phones. But that's still pretty great quality IMHO, and doesn't cost £100.
I installed DailyRoads Voyager on my Android phone, mounted on my dash, so I can record my drives without buying a separate dash cam. I was in an accident on Carnegie last summer when the other driver made a right to from the center (turning) lane while a big van in the left lane completely blocked them from my view from my position in the right (curb) lane. Got the whole thing on video, which helped my insurance agent get the other driver's policy to cover the damages pretty quickly.

I have only tried DailyRoads Voyager and AutoGuard Dash Cam. AutoGuard requires the Pro version to run in the background, so I haven't used it as much. DailyRoads has worked well so far.

DailyRoads Voyager <--Captures video with audio, can take periodic still images, overlays with gps information for both location and speed (not in the video itself, but as metadata you can see when viewing the recordings in the app), time stamp etc etc. It's not entirely free for the full version, but it's just a few dollars. Considering how much it can save you it's a very worthwhile investment once you verify that it works the way you want it to on your phone.

You can also run an old phone with Daily Roads Voyager which will basically turn it into a dashcam.
Do do some investigation and testing of your own though. As I understand it, Pixel 6 shipped with Android 12, and DailyRoads Voyager may have some trouble with Android 12.

How many apps can you have open before it unloads it from RAM?
(if you would not mind) Can you see if you can run Android Auto, Google Maps, and DailyRoads Voyager at the same time? I could not use my KeyONE for this and replaced it with the Essential Phone. If it can do this, it's a buy for me.
If you are using your phone for any of those things "while driving" you should already have it in a mount (unless your state does not allow it, of course). Additionally, if you have an android phone, you can use an app like Daily Road Voyager to run the dashcam in the background, so you can still do all of those things.
DailyRoads Voyager might be useful for the recording part. It's been a while since I looked into this but the general answer I remember was that there were no super basic roms quite so purpose-driven. The thought was to just install something light and stable and just run the app.
Never heard of the standby feature though (Greenify can achieve similar results)
The only apps I know of that do circular/buffered recording are dash cam apps like DailyRoads Voyager. Not sure if there exists a dedicated app that just does what you want though. I looked into the possibility of making one, but the implementation doesn't seem very straightforward.
Could this be why I get such large gaps (3-5 seconds) between files?
FYI: I'm running Daily Road Voyager on an old Droid X. I've got it set to create a new file every 10 minutes of recording.

I've used daily roads voyager in the past. Works well. Has tasker plugin features. Its saved my friend from a headache or two in resolving issues with the police due to crazy drivers doing crazy things on the roads of NY.

Simple - Dashcam. This is rather simply a camera placed on your windshield for the purpose of recording the road.
This could also go against your rear window, but due to wiring restrictions and simplicity/ease of access and removal most go against your front windshield.

Now the biggest downside to having a Phone recorder is you miss some of the biggest benefits of a dedicated dashcam, and it will utterly pillage your battery life, to the point where you'll need to keep it constantly wired to keep it charged, and it can get very hot during recording which is really bad for your phones battery!
In terms of dedicated devices, there's varying degrees of quality of recording an features.
Here are a few explained:
720p means the footage is good enough you'll be able to tell the type of car, but you mostly won't be able to see license plates, or have good night footage.
1080p offers much better clarity, allowing you to see rego plates, and 1080p devices also tend to offer more bells and whistles. As well as better night footage.
70-100 degree angle offers the entry level performance. This will mean you will lose the ability to see left and right beyond that of your normal field of view. Mostly captures detail of those in front, but limit detail of cars to your left or right.
100 - 130 degree wide angle offers much better field of view, especially worth upgrading as it can catches people who pass you on your left/right.
130-160+ super wide angle offers you an excellent field of view and the ability to see basically the entire windshield (left pillar to right pillar) so it can capture the colors of the lights at intersections. Must be FullHD or above as with an increased field of view, you will miss clarity if you need to zoom in (more view = less pixels covering the view = less detail.)
Other typically more expensive devices also offer the following features:
GPS recording. This as the name suggests offers the location of the camera, and speed you were travelling at the time. As with any evidence your speed can be called into question if you ever need to use the footage, so if you're a heavy foot driver, I would suggest a GPS-less model, or one with the ability to turn it off.
Parking mode. This is also self explanatory, you leave the camera when you leave the car and it sits in a constant standby mode. If the device detects a bump or other such motion (such as a large earthquake!) it will turn itself on and start recording. Extremely useful for getting insurance to cover those wee dings in the parking lot!

I'm not sure what you mean by 'picking up a dash cam', as a stand alone unit does not offer any type of Tasker integration.
There are some WiFi enabled cameras on the market (such as the BlackVue series), but I'm not sure what or how you would automate with Tasker.
If you are talking about picking out a dash cam software solution, then DailyRoads Voyager is one of the more popular choices, and here's a site comparing a few other solutions.
Now, as someone who has many dash cams, I want to caution you.
If you mount a phone on the windshield, it will be exposed to the sun, which can significantly heat up the phone. Combined with the fact that the camera and GPS are always running, that phone is going to get really hot.
Heat means thermal throttling, which affects performance, and Murphy's law dictates that it will fail when you need it the most. This is ignoring the fact that exposing a phone's battery directly to sunlight is a bad idea.
This setup does work for some people, but I personally recommend you get a dedicated unit, such as the mini 0806 or G1W, as these devices are more discrete.

Use it as a dashcam. DailyRoads. There's a free (with ads) and paid version.
Pretty sure DailyRoads Manager can do it, or at least it did a few years back when I used it while traveling on business.
You could use a dashcam app like DailyRoads to do regular video in the background, then speed it up after the fact.

Phones are designed to handle heat and be rugged which is what you need in a dashcam. Also you wont have to kludge the wireless sd cards since the phone has wifi and it can backup using an app for that, including samba file shares. Theres also apps for home security if you set one inside. Theres also wifi router apps to split an internet connection. Do it.
