I spent 134 hours with MHW. I have spent over 190 hours with MHGU, which I picked up after.
I think of it like this: MHW is the flashy feature-length film, polished and shining, full of explosions, but over pretty fast. MHGU is the TV series that started the craze, full of quirks you have to get around but with WAY more content and room to explore.
My original Monster Hunter game was MH Tri on the Wii, which is much closer to MHGU in style, so for that reason MHGU was very nostalgic in a way that MHW was not. So that's one draw that I knew about going in.
A few things about MHGU I did NOT expect to make as much of a difference, but have really helped it become the main game for me, are: 1. The Switch can be paused at any time. MHW can never be paused. I have an infant at home. This made a huge difference in my gaming quality of life. 2. You can play as a cat. And the cats have their own leveling system and have way more unique powers and skills and oh god so many cat puns. 3. Way more armor and weapon variety.
Hope this helps! Also, don't trust the MHGU demo to give you a good impression. It actually turned me off to the game before I got more of a sense of how the progression actually worked. For me, Monster Hunter is all about that progression... not being thrown into a monster fight with no idea what your gear does and no potential to use what you get afterward.

I think they are still trying to capture the iOS app dev to have him port it over to that side, but they constantly end up killing him by accident instead, repeatedly failing the quest.

The MHGU Database app from Gathering Hall Studios is my go to. It's a fantastic, free app without annoying ads. Play store & Apple Store
It has weapon trees, armor & skill info, monster info, quest lists, palico/prowler equipment and skills, item & combo lists, and maps with gathering locations. It also has a nice armor set builder and a wishlist to keep track of what items you are after.
Is very good despite all the things that are say about it, the only problem is is the UI when it comes to make sets so i use a set generator and a set builder when i make one and the lack of information in game so i use a database app.
Compare to rise most post on this sub are right, is a lot better and with more content and i have more fun in multiplayer here than in rise.
If you are wanting for rise-G or just want more monster hunter you should buy it.

As far as I know, if its like Gen on 3DS, yeah every monster has an armor set including all the subspeices. Not only that there are armor sets that dont belong to a monster but are their own deal that use parts from small monsters and metals. Take a look at MHGen database. It has all information on Generations so everything in there will be in Gen U.
Edit: I would also add that there are also Low rank, high rank, and G rank variants of most armor sets (mainly monster sets) so nearly tripple that.
The one I have is MHGen DB by Daviancorp I believe. Icon has a cat face in an acorn helm, the green one with the slotted visor.

MHGen database, it's probably the same one you have. It's a bit clunky, especially if you ever want to go back to the main menu, but as long as you use the search bar for everything it's functional, and the droprates for gathering locations is a great help.
LR volcano, Areas 2 and 10, you've got between 10-25% chance of getting them.
Also if you have android get the MHGen Database app, should have most of the info you need for finding things, some things are still missing but the devs are updating it as they go.
The link in my post lists the quests that reward it. Looks like the earliest is the 1 star Village quest Medicinal Moths. Note that this particular quest only rewards it if you complete the subquest, and isn't guaranteed. As for area it's been a while and I can't recall specifically where they spawn. Just do a quick run through of every area til you find them. In the future, Kiranico is very useful for information like this, or you can use the Android app MHGU Database:

It has all the monster info, weapon Info, skill info, all the info on quests. Including which quests are needed to do to advance the game as some quests are key quests that need to be done, but the game doesn't tell you which ones are key so this app will help a lot. I always use it when playing this game, don't know if it is on ios

This kind of has a set builder in it but I haven't really used it. I use this app more for farming general stuff and knowing what to break or when to capture or kill. The good ones are all on PC from what I've seen unfortunately and most of the apps are for MHW.

Check out the compendium. There are some weapon specifics, some unlocks, some general information. This was put together by /u/jeck95 back during MHXX, but it's all still relevant to MHGU.
Also check out the quest list doc that summarizes the quests and relevant unlocks that's handy to have in one place.
Between the two and Kiranico, and possibly the MHGU Database App if you're on Android, you should be set for good chunk of it. Once you get sorted and rolling, there's also Athena's ASS if you're up for making your own mixed sets.

Ok so the game has 2 halves.
Hub and village.
Village is Bherna, kokoto, Yukomo, Pokke and the Soratorium (last one doesnt unlock for a while).
The other 2 areas are the Hubs (hub(?) And Flying Pub (pub unlocks alot later)).
You can pick which one to do. The village is MUCH easier, as it is designed for single player only. It only has Low Rank and High Rank quests. It has some Pseudo G rank quests, but there is no proper G rank. Most people recomend you do this first.
The other half is Hub quests. Hub quests are ALWAYS scales for multiplayer (approximately 1.6x multipliers for things like health, vs their village counterparts). Hub quests are harder and longer. They go from Low Rank to G rank. (G rank being the same thing as Master Rank).
It is up to you to choose which to do first. I prefer to do Hub first because it makes you a better hunter overall and it progresses faster.
Low rank:
Village 1 & 2 are the same as Hub 1.
Village 3 & 4 are the same as Hub 2.
Village 5 & 6 are the same as Hub 3.
High rank: Village 7 is the same as Hub 4.
Village 8 is the same as Hub 5.
Village 9 is the same as Hub 6
Village 10 is the same as Hub 7.
After this, Village stops and hub goes into G rank.
The village and Hub progress seperately from each other. Leveling up one does not progress the other.
I highly recomend using the following 2 resources for anything MHGU related. Almost everything you could want to know is likely here in raw data.
To progress either the Village or Hub level, you need to do all the Key Quests marked in the above resources. Once all the Key quests are done in your current level, you will get a red text box somewhere. Talk to them to unlock an urgent quests 1 level higher. Do the urgent, to unlock the next level. (I think some levels have multiple urgents before leveling).
Hopefully this is a good start. Also, Gaijin Hunter on yt has some really good guides for various things.

I was going to complain about a few posts lately that are just asking for how to make a single armor or weapon, but apparently they are been made by the same OP.
Listen, the short time I've been on this subreddit I've seen that people are the really helpful to everyone (I'm obvs talking about you u/Orx-of-Twinleaf ) but there are really simple stuff that you can easily find on kiranico, mhgudb(Android) Athena's ass... There are plenty of options available, so there isn't really a need to open a post just for that...
Maybe I'm just too annoyed for such a small thing. We could also open a post and pin it just for small questions.. idk.
