Which version are you using, is it up to date with the v 3.4.3.2?
I can only suggest you switch to Lollipop Screen Recorder if you already updated to the newest version and your problem still exists.
If you haven't the recorder function installed by default then just do it manually and load the Lollipop Screen Recorder. It requires no rooting and is compatible with any Android OS from 5.0 and onwards.
Actually, all my testing was with Android 7.0 (on a ZTE Axon 7). It was a really buggy/sluggish version of Android.

It looks good, but it limits you to 10 MBps so it's a little compressed at times. And it gets its audio from your phone's microphone. Like all the other recorders I tried.
Anything DU or Cheetah Mobile delete it instantly, both are extremely sketchy devs that have been shown to yank your data and send it off to China.
Also, Android since 5.0 has had a built in screen recorder and this app leverages it.
Not very laggy if you don't record on a high quality setting. No need for a particularly great quality, and no need for audio, so that helps to cut down on lag, too.

kind of dumb that samsung doesnt include it in their os natively like sony does (which is really well implemented) but this should work fine
I just tried SideSync for the first time yesterday with Note 4 Gear VR synced to my Samsung Note Pro 12.2" tablet and I thought it worked well, at least for the game I tried, Bandit Six.
There was a little lag for several seconds but it seemed to settle down after a bit and there was very little lag. I wasn't trying to record the screen at the same time so maybe that was enough overhead for you to cause it to be much worse. I'll give that a shot and see if that hinders it.

I'm going to assume you're on Lollipop as that's the only way I know of recording without root. I personally use this as it has external audio recording and seems to be lag-free on my Nexus 5, but I'm sure there are plenty of other good recording apps.

I've been undetected for over a year, works for videos to obliviously.
I probably had the least practical way of doing this:
I used lollipop screen recorder, then edited the mp4 with Vivavideo and then converted it to a gif using Cloudconvert.
i would recommend capturing a screen recording and sending it to EA, as this is definitely a glitch.

I was able to record a video ( https://www.youtube.com/watch?v=bqI8ULnyCRs ) using Lollipop Video Recorder, found here: https://play.google.com/store/apps/details?id=com.rivulus.screenrecording&hl=en
The limitation was that it didn't record sound, so I had to record the audio through the air using a bluetooth speaker and a separate microphone.
If it doesn't work for you it very well may be that there's a 7.1.2 bug that disables apps that draw over others after using Daydream until a restart of the phone happens.

If you also experience this please submit feedback by going to Daydream app, settings (hamburger menu) and Support/feedback. Or perhaps do a Google support call. I would think the more people mentioning this will fix this faster.
If screen recording apps continue to not work, you could try the YouTube Gaming app. It streams low quality to a youtube account, but it's something. One other option is to use a Chromecast and record the screen with another camera or capture card. good luck! Hope to see your app on Daydream.

I think it is quite vanilla Android 5.1 (only few apps pre-installed). I can't install the linked app (it shows as not compatible), but I tried this record app and it is working fine (recorded 10s and confirmed that video is actually a capture of screen).

I tried using adb shell command from pc to screen capture but I didn't like the results (no sound and it was laggy). Personally, I will wait until lollipop comes to my device officially, I am too lazy to search for working ROMs. Until then, I will stick with mobizen, it works fine but it has hard coded watermark on videos.
