It's not even just about data privacy. It's about convenience as well, and the inconvenience of having to keep track of yet another user account for apps that you'd think would work perfectly fine without an account and the account would just be for optional personalization and syncing features.
And app descriptions do sometimes neglect to specify if a login is required or not. Adobe Photoshop Sketch mentions its cloud features but doesn't directly say that a login is required to even start using the app.
There's also the Microsoft Office apps, which are "free" to use but need an account to be able to create and edit documents, not just read them. And Microsoft Office is installed as bloatware on my phone.
