Unblock Me was pretty popular within my circles back in the day. Surprised to find it now with Play Games integration and an update as recent as July 2015.
I personally play Unblock Me. There is a paid version for $0.99 that I have. Just the one I'm use to as I played it on my iPod touch back in the days first
I've found Unblock Me works well with elderly people and people who are not into games in general, plus it fits your requirements : slow-paced, requires a bit of thinking as well as some hand movement, and can be played with one hand.
Minigolf and pool games could be adequate as well.

I was going to try to do one of these for my players. Require a bit of thought from them to get to the other side.
Probably add monsters that get released or tinker with the maze to mess with them...muahahaha

I am planning to use this structure as a floating relic of several square floors, where players must move a series of rectangular pieces, one at a time, in order to cross them and advance to the next floor. Yes, just like the game...
Solitaire is my favourite bus game, especially since I can play it without having my data on. I play it sometimes just to kill time and focus on something else for a bit.
That and Unblock Me.

Favorite Unique/Casual Game: Unblock Me FREE
It's an android game(does this still count?) and I absolutely love puzzles like this. I also love sliding puzzles. I used to play this a lot where there were classes, just to keep my mind occupied while waiting for the professor to appear or to just pass time. I've solved a good amount of puzzles already and I probably would've completed all by now if I hadn't joined an organization last semester.
For PC I would definitely choose The Longest Journey. Someone described this as The Walking Dead of it's time. I never played TWD but holy shit what an adventure TLJ was. I hated some puzzles because they were difficult but TLJ was that game you could sit for hours and not realize the hours go by. I remember playing it at around 12 noon and I was shocked when I looked at the clock to see that it was now at 4pm. I thought I had only played for 2 hours! The voice acting in this game is amazing, and the voice acting really helps with creating the characters because they receive more life and don't appear too dull.
