Have you considered running a game of Artemis? You cooperatively fly a starship with each player having a specialized task. If you have enough staff you can have multiple ships at once.

Artemis is arguably even better if you're looking for less "fuck with knobs and buttons on queue" and more "fly a fuckin spaceship with friends."
