Or have two videos side-by-side showing different aspects of your gameplay/design - say on tablet and phone
One game was Compulsive where in the colorblind mode gave each color a pattern much similar to this. You could easily use something similar, having the stripes go in a specific direction based on each specific color, but correspond to a color wheel orientation (vertical for red, horizontal for green, the diagonals going clockwise are red to green through orange and yellow, the diagonals going counter-clockwise are red to green through purple and blue), but that might get cluttered fast.
The other game I have a horrendous time recalling the title of, but the shapes it assigned were one that we associated colors with (a rose-sprite for red, a crescent moon for purple, etc). This worked ish, it made for a lot of empty space in a game that was supposed to feel cluttered but it made it possible to make color matching via shape. This wouldn't work for your game, though.
My last suggestion would be to look into colorblindness and how it affects each person's color pallet based on which type (Deuteranomaly, Protanomaly, or Tritanomoly) and have a set of colors to go with each. It wouldn't have to be major, for example with Deuteranomoly you simply have to shift each hue a tad towards violet or yellow-orange (whichever of the two it's closer to) and that would make everything easier to distinguish for that particular type of colorblindness.
