I don't know if this entirely fits your use-case, but with dict.cc you can create vocabulary lists and simply add words you search for. You can then use a vocabulary trainer on your created list.
I also searched around and couldn't find one, but I'm not a developer and don't know much about these things so I thought I may have just missed it.
I don't know if this helps but they also have an Android app that is usable offline. https://play.google.com/store/apps/details?id=cc.dict.dictcc
Hat auch eine gute App mit umfangreichem offline Wörterbuch: https://play.google.com/store/apps/details?id=cc.dict.dictcc
For quick translations of words and simple phrases, go to https://enis.dict.cc. They also make an app (iOS, Android here) that'll work with offline downloads of the dictionary. Great for quick lookups on the road.
Google Translate is also not half bad going between Icelandic and English, although occasionally its translations are outright hilarious (in both directions).
Tungumálatorg has an online video collection that was originally used as a TV course in 2003 and mostly revolves around everyday situations. To get yourself more accustomed to hearing spoken Icelandic you could also stream for example RÚV TV (also English movies with Icelandic subtitles, probably less helpful), or listen to a podcast (I'd probably go for something like í ljósi sögunnar for its pacing and clear speech).
