If you have a phone capable of running S Note do that, if not Fair note is pretty good hitting a lot of what your looking for, and one more suggestion Zoho notebook it's new and looks like it will become better with time.

Evernote and OneNote are useful if you value more formatting options.
If formatting isn't as big of a deal, Google Keep works wonderfully imo, plus it's well integrated into the Google environment and can display the notes on your computer as well.
If that's not really your cup of tea, I would also recommend FairNote which can encrypt your notes if you want to, and the add note notification is really convenient.

If you mean secure on device: fairnote
If you mean good for privacy: joplin
Joplin has markdown and plugins eg katex or mermaid and is fully open source and syncs with a few different cloud services so you can choose which you like best.
Fairnote has more security but doesn't have features like mermaid (diagram syntax) which is why I use Joplin more
