Hey, you might enjoy my game, Idle Mage Attack. It is endless, but has a definite "You Beat the Game" point, which I think is what you were getting at. After that, you can choose to enter New Game Plus if you like. :-)
Idle Mage Attack is a fun game by TopCog is a pretty nice idle game.
BattleDNA2 - Idle RPG I think will also be pretty fun but I have not played it much since I do not like wasting time on games while I am trying to make my own game.

Idle Mage Attack is an aesthetically pleasing endless idle game that is more intricate than most but still delivers the classic satisfaction of endless progression that most idle games have. It's developed by a redditor, /u/TopCog, and it gets updated with awesome content faily frequently.
Anodia 2 is a Breakout type game that's very casual but can still be taken seriously since there's a points system. There's tons of surprisingly creative stages you unlock randomly through playing and earning coins, and it has a very relaxing and still yet engaging atmosphere that the music and amazing art style delivers, emphasized by the forever-ongoing level play until you run out of lives.
I play both depending on my situation just to pass time (sorry topcog) and both developers are support-worthy. Both have IAP but neither are P2W.
EDIT: Honorable mention: ULTRAFLOW and ULTRAFLOW 2. They're fantastic games, but have little replay value which is disappointing because even after the many levels and second game alltogether I still felt dissatisfied.
Shameless plug: Idle Mage Attack (Android only currently) is quite long by most standards. Our most veteran player logged 48 days of "active" play and 57 days of idle time before deciding he had experienced everything :-)
If you don't mind an Android game recommendation, Idle Mage Attack has a proper ending with a final boss fight, after which "you beat the game." You can keep playing after that by entering New Game+, but the purpose of NG+ is to let you grind out forever in case you want to, not to achieve any specific goal. Cheers! :-D
