Mobile Witness dev here. I have an app out that I personally think is underused just to have on their device if the need ever arises. The spiel is Mobile Witness is an application for collecting potential evidence through your mobile phone by continually recording and safely uploading GPS coordinates, audio, or video footage. Recordings will even continue whilst the screen is turned off. It's a solid defence against aggressive persons and dubious law enforcement officers; periodically and silently uploading the recordings.

"Mobile Witness" on Android is decent for recording to the cloud but it doesn't start on open, unfortunately. But it does have a widget for starting audio or video recording.

I'd recommend Mobile Witness, I'm not sure about automatically starting up recording but you could set up Google assistant to open the app when you say a key phrase

It'll even let you record video with the screen turned off, which is pretty neat
