Be interested in how you get on. I used MobileOrg a bit several years ago, but since it started to stagnate I had trouble accessing files saved on Dropbox and switched to Orgzly, but I'm keen to see how you get on with forking MobileOrg as your proposals sound interesting. Unfortunately its been too long since I last used MobileOrg to say what I found limiting in it.
Orgzly is a bit different. It's based on a text file format and can sync to Dropbox. It's basically heirarchical notes which can become a TODO item (at any level), and you can set a scheduled date as well as a due date, and be reminded. Completely free.

I use Orgzly to take notes in org.
In the case I need to open an .org file not synced through Orgzly, I can open those as text files in any app I like (Google Docs, Moon Reader) via Total Commander.
Does your boss have an android or iphone? There are apps that read orgmode files for both, which can synchronize through dropbox so you and your boss can make updates at the same time.

It stores its data in human-readable text files, so it can be easily synced and edited on a PC (e.g. via Emacs + Orgmode)
I haven't personally done more than a quick try-out, but I know several people who use orgzly with syncthing. It uses emacs' org-mode, so it's compatible with desktops that use emacs.
Even if an android app is not necessary, I've heard people swear by org-mode

There's a really good Android app as well. I just hope they open source it soon, as they've stated they are heading in that direction.
I'll second the plain text. It's future proof. Some applications will go away. Plain text lasts forever.

Eu tenho um sistema bem original. Eu uso o Orgzly, Emacs + org-mode e um repositório git. Pronto, tenho tudo centralizado.
My plan is to sync my org files with my pc using git, and then I can use emacs inside termux on my phone just like I would use it on my pc.
Now I already have a folder synced, but I imagine that using git for this should be better in the long run.

On android this app claims that it can sync, though one maybe has to use dropbox for that. I don't know if it is a good solution.

There are two apps for Android that can digest / modify org files, orgzly is one, I forgot the other one.

There's no problem AFAIK to install spacemacs on Windows. And if you prefer to keep the classical Windows bindings, you can use cua-mode on vanilla emacs.

At the moment, I really like Joplin. I'm waiting for the 0.7.0 release of turtl and it might become the winner. They're both great for simple and quick notes in Markdown. Turtl reminds me more of Google Keep, and Joplin reminds me more of a simpler evernote. I like Joplin more at the moment because it can sync to a folder or nextcloud/dropbox/etc instead of requiring a separate server to sync to. Both offer encryption.
Joplin's web clipper is OK. It basically converts a page or selection to markdown, and so far seems to good for what I use it for. It doesn't capture as much formatting as evernote's clipper, but that's rarely been a problem for me.
For documents (pdfs, scanned images, receipts), I put them in nextcloud and the fulltextsearch plugin OCRs and indexes them so that I can search their contents.
