I like to switch phones a lot and load custom ROMs whenever something new comes out, so I'm going to praise Simplenote;

I don't use it for anything secure, but letting me type out quick notes for groceries, favorite foods, to-buy-lists, etc..has been amazing. Their desktop client on Windows is pretty great too and they have a web client as well.
For the price of free, it's a pretty good alternative to anything else I've used.
Have you tried Simplenote? It works well for me on all my old Android phones and tablets, and you can also access your notes in a web browser from app.simplenote.com.

Honestly it sounds like MS Office will do what you want, but it's not suited for that haha.
The simplest one I know of is Simplenote but it does have features, but you could technically just open the same note and continue typing on it, it saves as soon as you leave it.

I've been looking for ages and couldn't get anything to stick, im currently using Bundled, the UI and animations are a joy. Still a bit bare bones though

You will need to make an account, but once you download the app and sign-up, you can then use your fingerprint or set up a different PIN to sign-into the app.

I always end up recommending Simplenote when I visit this sub. It's not advertised as a journal app but you can certainly treat it like one. And it's got everything you described. It's simple, it's got some basic security, it feels fast and lightweight, and it's not heavy on features like a travel journal app might be, etc. Oh and totally free plus no ads.
I use Simplenote to write diary entries in addition to other miscellaneous notes. It's pretty bare-bone but that's why I love it as a "diary" app.
For something a little more advanced, I use the good old Google Docs app. It can import images, change fonts, customize formats, margins, etc.
On my Pixel 3a XL, the INSTALLED Simplenote app size is 15.01 MB. I'm currently using v 2.18.

It's perfect in so many ways for me that I consider it the best note taking apps ever. It has some caveat for more "advance" users and cannot save image (neither does onenote if I'm not mistaken), not funky reminders (alarms, notification etc)...but I just need a digital notebook (it's my fieldnote book on my phone)
It's just text, I can lock the app, I can copy/paste any text, I can tag notes (i got multiple categories of notes for one project).
Most importantly I can sync all my notes across devices, os's, computers and can access them online. It's also free.
I think something like Simplenote would be better. Or Standard Notes if you want something more secure.

Simplenote works really well, can sync, cab be accessed by a browser, cheap (or even free? I forgot. Anyway, it has some note-tsking features but not pictures, colors etc. because it's, well, simple.
I also like UpNote a lot for its beautiful and smooth UI, lots of features (font colors, sizes etc), folders... It can sync to the cloud, so it's useful if you wanna use it on more than one device, but it has not browser access. You'll need to install its app on each device. It's a relatively new app, but the dev is very active, passionate, and keeps releasing updates quite often.
I'm not certain the Android app for simplenote has the same features as the iPhone counterpart, but I'm guessing it does. Check it out.

Simplenote lets you pin favorite notes that then appear on the top of the list. Also, you can set the sort order for notes by newest modified or newest created first.

Simplenote is my favourite. It supports markdown and really lightweight. I can also access my notes on any of my devices and over the net. Also allows backups.
Simplenote fits most of this, just not the nesting - tagging might help instead?

Simplenote is a really good app, but I'm also using Google Keep and Google Tasks (those by google can be viewed and edited online too, for example by the gmail right tab)

What about Simple Note?
It's a minimal note taking app with not many gimmicky, or unnecessary, features. Really, just take a note with a title, add notes, add tags (if you want) and that's it. It is light so it works without any hitches on the web. And the same goes for the Android app, light and snappy.

I have 3 special note taking apps in my phone and I can't settle on one.
Simplenote is fairly straightforward. ASCII with ability to Markup. You can publish notes to share them with anyone you'd like..
Monospace went without an update for a long time but just recently got one in June. If it weren't for that, I would have thought it was abandoned. It has a fun anesthetic to it and it has an interesting way to structure your notes using hashtags. Also writes ASCII with Markup notation.
Orgzly looks like a crazy powerful note taker app. Structure is very customizable and you can use the app to take notes, to set up reminders, tasks, lists, etc. I have the least amount of experience with this one simply because it looks so feature packed, and I don't have the time to play around with it.
For me simplenote is better, just because I can sync and write my notes also on the computer.
For generic notes, Simplenote or neutriNote are very good apps.
For more of a diary type app, Diaro is pretty solid.

Firefox (beta) - really dig the built in reader mode and link queue (when in other apps click on links they go into the queue instead of opening the browser). Also the addons allow uBlock Origin (better than adblock plus) which blocks ads and makes pages load way faster.
Simplenote only asks for full network access and view network connections and supports links.
