This one? The listing says it has ads, and shows them the screenshot.
I'm not against devs making money with ads, I'm just not sure I see the app you're referring to.

I've searched far and wide for a best Sudoku app to suit my needs, I tested several ones from the Play store. My absolute favourite is Andoku 3 by far.

I wouldn't worry too much about trying to find an app with the colouring feature; it isn't that common or popular/necessary of a technique (I only see a couple people in this community use it, and just one that advocates for it HARD). I would focus on the basics (hidden or naked singles/pairs/triples, pointing pairs, etc) and from there you can build to other techniques (x/y/xyz wings, fishes, etc).
I don't often play on my phone, but I have the andoku 3 app and like it. Again, it doesn't do colouring (that I know of), but when you select a number, it will highlight all of them that are on the board (both the determined numbers, as well as candidates). The highlighting feature, I think, is more beneficial in that it can help you see certain patterns.

Check out Andoku 3. It has tutorials for various levels of techniques and when you request hints it explains why you get the hint you get.

Are you on Android? Andoku3 is a quality app, that also has built in tutorials to help you learn how to solve the puzzles. https://play.google.com/store/apps/details?id=com.andoku.three.gp

Also when it computes the candidates, it doesn't leave any out.
Overall, I like it. The app looks good, runs smoothly. Functions well. I probably wouldn't switch from Andoku though. Most of my issues are UI issues....
In light mode, the yellow color of the number in the cell is too close in appearance to the yellow tint of the selected row / column / block
I would like to see more puzzle modes.
I tried clicking on the hint button on a brand new game and was wondering why the button was doing nothing. If it's not valid to use a hint, the button should be disabled.
Its not immediately obvious that the hint option fills in the cell that I have selected. To me, that's not a "hint", it's solving one step for me. A hint would be something like "there is only one possible value that can go in this cell"
They're should be a deselect button, to clear the "selected row/column" highlights
Puzzles are too easy. I beat a "Hard" puzzle with only the most basic solving techniques.... Specifically, I didn't use any techniques on this page any more advanced than than "Naked Pair" I world expect the hardest difficulty to need advanced techniques (like xy chain), the second to last difficulty to need intermediate techniques (like x wing). Perhaps you need a difficulty above insane.
I would like to be able to have a saved in-progress puzzle for each difficulty, rather than a single in-progress puzzle for the entire app. It would be nice if I could save a specific puzzle, and come back to it later (while, in the meantime, doing other puzzles)
There used to be two versions, one that was free, but it seems there aren't anymore, hmm, I bought the full version and am very happy with it, but if you don't want to there are 2 other apps that I would reccommend, andoku3 and sudoku 10k the first one is a lot more user friendly, but the possibilities with 10k are really good, just the UI is a bit too cumbersome :)
Yes, Hodoku explains solving techniques very nicely!
Also wanted to add, if you're on mobile then Andoku 3 is also a great app.
You can view tutorials and then play the relevant puzzles. so you learn a few techniques at a time, grouped by difficulty.
You can do this with Andoku3
