You can't fire the task simply by typing some kind of hot-string (like in AHK), you need to run the task with some sort of shortcut (or just an hint...by shaking the phone [need a shake event profile linked to the task]).

You don't need to set Tasker as default keyboard. A3 keyboard action will:
Set Tasker as keyboard.
Write %timestamp variable value.
(if "Don't Restore Keyboard" option isn't ticked) Restore your default keyboard.
Edit: The following app Texpand Plus - Text Expander works via hot-strings and has tasker integration.
Rather than recommend a particular note-taking app, there is an app that can insert a timestamp in any note-taking app you currently use. It's called Textpand Pro. You can setup a shortcut (for example, "@t") and map this to whatever date/time format your want. When you enter the shortcut, a green bubble appears and you can click it and it will insert your date/timestamp.
It's really a great text expander, but should work well with your workflow.

I see that's been depreciated by the author, (I'm guessing the other app is subscription based), but it still works just fine for me.

Looks like it's only in the PRO version which you have to purchase, and it says "Tasker Built-In Variables", which I assume means system vars.
Watched the video, didn't show any user vars available, only Global Built-Ins. Bummer as it would be really cool to have this capability.

Haven't used any of them so I cant recommend one, but they all seem to do the same so pick one that looks best for you.
