The Bayou has an app specifically designed to avoid that problem. It has the entire beer list updated in real time, has sorting of beers by rating, ibus, abv, newness. You can filter the beer list by size, color alcohol content and hoppiness. You can track beers you have tried, mark favorites and keep notes.
We do stock all those beers it is simply that with 380+ beers on our menu and with a great majority of those being special order beers they will go in and out of stock all the time. Also, many of the beers we get are one time shots and thus when they are gone they are gone. In fact at any given moment we probably have 10+ beers in stock that are not on the paper menu because they just came in in the last few days.
Since every beer we order has to come through the state DABC we are at the mercy of their ordering system. Sometimes a special order of beers will take 3 weeks, sometimes 6 months. Thus it is simply not possible to ensure that we have the exact same beers all the time.
Finally, every reprint of our menu takes 3 reams of paper and a full afternoon to change out which is quite a waste of paper and time.
This is exactly why we wrote a real time app which is updated about every 90 seconds and will remove a beer from the list as soon as it is sold out. It also shows all the new beers as soon as they hit our coolers. It allows sorting of beers by all sorts of choices, filtering of beers, links to untappd and ratebeer and tracking of favorites and tried beers. It is simply the most accurate beer menu available anywhere and it can be run on any iOS or Android phone.

Ok, this one finally got me.
We did solve this years ago actually. We have our own app which is nearly 100% accurate on our entire beer list and whenever we advertise our list we always understate the total.
The app is literally real-time. If we run out of a beer it comes off the app. When we get new beers in, they are immediately on the app. Every page of the printed menu warns people that they should be using the app, that if they order a beer we are out of then they should use the app. That the app lets them sort and filter by many possibilities including price, abv, hoppiness, color, style, country etc... You can search for any beer by name or brewery. etc....
Heck now (or at least when we reopen again) you can even order your own beers right from the app.
Nearly every time someone orders off the menu and we are out of the beer we suggest nicely that they use the app. Then they immediately order another off our menu. 99% we are fine but if they are ordering things from the same special order which came in a month ago (which beer geeks often do) we can strike out again.
Regarding printing the menu more regularly, every printing uses a full ream of paper and takes 3 people several hours to refill all the menu. As you can imagine that gets very wasteful both in time and labor. This is exactly why we have the app.
I am strongly thinking we are going to stop offering the print menu all together because we get nothing but grief online from a few folks (most of whom know about the app but still bitch).

Every page of our printed menu tries to get people to use the app. I'm thinking we are going to have to get rid of the printed menu all together though.
