Yes, there are many simple/repetitive games that I'd love to be playing. But the ads completely ruin the game. What's pissing me off even more is that games that let you pay to remove the ads, but it doesn't remove ads from things like bonuses/loot boxes/additional lives/etc.
Take Tiny Rails for example. You have to pay nearly $200 per year for their VIP to remove ads. But even if you buy that, you still have to watch an ad at each and every station if you want the loot box. You stop at a station every couple minutes. That's $200 a year, and if you play for 1 hour, you'd still have to watch around 10-15 minutes of ads to get all the rewards. Absolutely disgusting.

Tiny Rails plays an awful lot like what you describe. Unlock routes and trains, then deliver cargo and passengers in real time

Tiny Rails scratches that itch for me. The game is kind of split into two halves: passengers and trading.
Trading is what you're asking for, on the nose. Buy low, sell high. It's completely manual, making this the only game I know of with idle elements that you can actually sit down and play like a real game when you want to.
The passenger side is an idle game. If you set a destination, your train will go there and wait for you while the app is closed. However, leaving the destination unset lets it wander and make money from delivering passengers on your behalf.
It's F2P but you can get gems easily, as certain in-game missions (usually along the lines of collect a list of goods, or visit a list of stations) grant them and you have the option of watching ads to gain more. I strongly suggest setting the option in the options menu to make the train stop at stations as by default there's a timer, and it often shoots off before you want it to.

I really want to play Tiny Rails, but the fucking God-awful VIP system absolutely ruins the game. $192 USD a year to remove ads. PER YEAR! It's absurd! It's such a quaint fun little game, but jeez oh man, my WoW subscription is cheaper than that!
Also used to play Leap Day everyday until VIP hit. I get it for free since I was a previous supporter, but the new characters are so OP they take the skill out of the game. Now any brain-dead idiot can 100% every level with ease.
VIP is worse than $99.99 IAPs IMO.

Tiny Rails is gorgeous pixel art eye candy with train management gameplay. It continues in the background.
Townsmen (the premium version!) Is the best city builder I've found. Unique art style, no artificial wait times, it's all dependent on your supply chain/management. There is a secondary currency to instabuild if you're impatient. It's not needed and once you get your economy going, you have enough of both currencies.
I enjoy watching my townies go about their day. Each villager has their own paths throughout the day. You might be following the construction of one of your buildings and the construction worker will leave his house and either go straight to work, stopping by to get some lumber from the mill or a storehouse; or he might go to the butcher's first, then go for a pint and THEN finish your oh so important hunter's cabin.
The game does get to an automatic point but only while it's open.
