Ahh, you just have to immerse yourself with vim. Doesn't take that long. Try to resist overusing HJKL, and use the more specific and powerful movement keys. If you use Android, definitely pick up "Quick Vim Reference": very handy and easy to use reference tool.
Re: Ubuntu versus Arch: You know, it's funny. My experience has been the opposite. I was on Mint for a month before switching to Arch. I played it really safe and didn't do anything crazy, only installing from the official repos. At first, it was fine, and then things slowly started to break, and then the whole thing imploded and wouldn't boot -- kernel panic. I couldn't figure out how to fix it after two days.
So, I gave Arch a shot, and, after a lot of reading, I understand SO much more about how Linux works, and I'm much more comfortable. Packages are fresh, the AUR is amazing. Lightweight, fast.
Absolutely no problems since I made the switch a year ago. Arch is stable as hell right now. I hear that it developed the break-y reputation from past builds. It's just been smooth sailing for me.
Yes, you have to do lots of things manually, but I prefer it that way, because it gives me an idea of how to fix things if I ever have problems.
