I want to add TypeWise Offline to the list of keyboards recommended here for privacy. As the name suggests it has no Internet permission, and it offers an (optional) keyboard layout with larger hexagonal keys that is a real improvement over the usual one. The app is not cheap though.

WRIO Keyboard. All data stays on your device and is never transmitted to the cloud -it has no internet connection. The only permission it asks is the ‘control vibration’ permission. Just compare it with the other suggestions.
It does take time getting used to any keyboard. I purchased the WRIO Keyboard a while ago and I returned it the first time after a few hours of using it because I thought I wouldn't get used to it, but a few days later I bought it again because I realized that this keyboard works great for big fingers like mine. The interface of the keyboard is much more different than an average keyboard, but in my opinion, it makes me type faster as everything is where you need it.
This keyboard is tough to get used to, I'll admit. But once you got it down, you'll be glad you bought.
It uses a different layout than any other keyboard and has learning autocorrect, multiple language support and rapid dual hand typing. It is quite new and there will definitely be improvement in the future
Open Board AFAIK is at the top of the privacy list as far as keyboards go. No Swype though. Has voice but it just opens the built in google voice to text program for you. The incognito feature is nice and I've used it off and on for awhile. I'm currently using grammarly but that's a paid service with a decent privacy policy. Typing on open board right now and am noticing how much grammarly actually corrects for me. My typing is bad. Since end users are not the product and they rely heavily on keeping people happy enough to fork over $30/ month I count them as not shady.
Anysoft is old school. 2012 and still active development. Open source. Functions off line.
I've read about typewise being good but haven't tried it myself.
Tiny keyboard as well. Haven't given it a shot.
My default second keyboard specifically because I maintain multiple servers and do a lot of terminal and ssh is hackers keyboard. Its old. Like 2012 gingerbread API 9 old. The Dev acknowledges it on his github but it still works on my pixel 6 pro. It's probably the longest running apo I've ever used on android. I don't think the Dev gives enough of a shit to bother trying to invade the privacy of anyone still using it.

I suggest AFWall with the magisk module to deny any traffic outside of it as well as storage isolation for all apps you do jot trust if you're looking for the most private setup. Use AppOps or PMX to maintain and control the permissions of each app as well.
