$100 on amazon. I don’t know how well they will wear, but it’s a major improvement over the cloth that was in it. The factory seats looked blue, torn, and had a layer of dirt that I didn’t feel like dealing with. Cloth might be cooler (temp wise) but I love the “leather” look. Took me 6 hours to do both. Would def do it again if they get messed up in a couple of years.
These are great - BASENOR Tesla Model 3 Model Y Leather Seat Back Kick Protectors Kick Mats Black Set of 2 https://www.amazon.com/dp/B08ZS2J7YT/ref=cm_sw_r_cp_api_glt_fabc_97MFYA41EZGEWWBW052T?_encoding=UTF8&psc=1
Just got this a couple weeks ago and it's been great. https://www.amazon.com/dp/B01KNWU66W/ref=cm_sw_r_cp_apa_glt_fabc_4H8S3T8KCQWTTD4GA4S7?_encoding=UTF8&psc=1 Nothing fancy but does exactly what you're looking for. The top just slides over the headrest and that's really it. Takes less than 10 seconds. Doesn't slide around at all when I'm driving, although my seats are cloth. It seems like it would work perfectly fine on leather though.
You can buy pleather replacement seat covers on amazon for $100. It looks fairly DIY and the pictures from reviewers actually look really good. Probably won't be the greatest quality and durability, but for $100 it's hard to argue.
Going to order them for myself. Here's the link. https://www.amazon.com/1990-1996-Standard-Seats-Simulated-Leather/dp/B00HZ7CA4K

I really like these for the seat backs Tesla Model 3 Model Y Leather Seat Back Kick Protectors Kick Mats Black Set of 2 https://www.amazon.com/dp/B08ZS2J7YT/ref=cm_sw_r_cp_api_glt_fabc_XM51C46XSC0HDXSMCSEW?_encoding=UTF8&psc=1
If you’ve got a sedan, or just want to keep an eye on your dog closely, buy one of these.
It gives your dog a safe space in your car, and protects your backseat. My pup peed in ours one time when she was sick, and it didn’t soak through to the seat.
I used a reupholster kit. it takes some time though https://www.amazon.com/1990-1996-Standard-Seats-Simulated-Leather/dp/B00HZ7CA4K/ref=mp_s_a_1_3?dchild=1&keywords=miata+leather+seat+upholstery&qid=1606958150&sr=8-3

This is the set that I installed in mine about 3 years and 10K Miles ago. They aren't perfect (a little short in the back), but as far as anyone can tell they look great and have held up great.
I got this one for my 2020 XSE and it worked out great. I especially like the front curved flap so the dog doesn't go flying into the front seats (mine liked to try and get on the armrest).
I've had quite a few customers come in with this style of rear cover (maybe even this exact one, I'm not sure) and they seem to work as described. Granted my perspective is a bit different, but I really like the ones that just have clasps that go around the front headrests so that they're easy to remove when I need to, say, access the back seat for a fuel pump recall. etc.
Ideally the kinds that have cutouts for the seat belts would be best. Not sure that there is a good solution if you need to keep a seat open for a human occupant (or child seat).
I use these - BASENOR Tesla Model 3 Model Y Model S Leather Seat Back Kick Protectors Kick Mats Black Set of 2 https://www.amazon.com/dp/B08ZS2J7YT/ref=cm_sw_r_cp_api_i_V9FM6VPBNQ43P89VW00N?_encoding=UTF8&psc=1
I got this pretty inexpensive one for my s5 cabriolet. Works just fine: https://www.amazon.com/dp/B07G642RMQ
You have the option to put it around the front headrests as well but I’ve never done that.
I have read a lot of good reviews about these:

I’m also looking into these for later, which I’m sure is going to cost a pretty penny but I’ve heard they are amazing:

I have this in the backseat of my ‘18 Tucson.

They make exactly what you're describing. I have one of these that I keep folded up in in the back: https://smile.amazon.com/dp/B078L2MWRN?psc=1&ref=ppx_yo2_dt_b_product_details
Takes 30s to strap around the head rests when you need it.
You can just add seat covers for ~$400+, or a back seat protector for ~$40.
On the current market, I probably have to pay full MSRP for a new car. If that's the case and if I can wait, I would wait and buy the one I want.
BTW, I have the XLE Premium and haven't open the moonroof once.

Get this one. Much cheaper and fits great in my Wife's Model Y and my Model S. Just an option. Works with out Lab, Pitt and Great Dane....
Oh in that case I have something like this I really like. Easy to chuck in and take out, plus keeps things from getting muddy everywhere
I would recommend getting a dog car seat cover! Here’s the one I use:

I bought this cover
Regular size fit the backseat really well. The only thing is that it’s hard to get the part that closes into the seat back to stay. You don’t really need it for the cover to work well though.
I have a cheaply one from marshalls that has lasted years.
Something like this though maybe work for you? I looked up “split seat rear cover” so it’s not one piece.
