this one which is pretty simple and inexpensive. The wood and metal combo looks very masculine but is still versatile. Simple, clean lines. Nothing frilly or unnecessary, but gives off a “grown-up that cares” vibe and not a “college kid that bought the cheapest bed they could find” vibe

Edit: Note though that I am using the outer frame part only, not the slats that the mattress would normally rest on. Don’t know how well that holds up.
I have two of these ZINUS Suzanne Metal and Wood from Amazon. If you're looking at Ikea, you might like this - metal frame, so it feels really solid - I've been really happy with them (2 years). I was skeptical of ordering something like this, but it's pretty much just flat-pack metal frame and simple headboard - not much that can go wrong.
Mattress - Zinus sells them on Amazon, but I have no idea their quality.
We have a Casper ("Original"), but it's more than your budget alone. They do have a cheaper one that would possibly work for you. However, our "Original" feels very soft to me compared to our 12+ year old Tempur-Pedic - the Casper is serviceable, but I do like the heft of the Tempur-Pedic.
I haven't tried any other mattress in a box companies - but they are a big business, so there must be a lot of people who like them.
Beware of mattress return policies, however, if you want to be a conscientious shopper - yes most of the online stores have good return policies and they favor you as the consumer - but the mattress very possibly ends up being trash if you do return it - when I researched this before, in some states they can donate the mattresses, but in others they have to just trash them. I can't find documentation on where Virginia falls on that, though.

Amazon! We've put together a lot of IKEA furniture in our years together, and this bed was a freaking breeze. It's super sturdy and has been such a great steal! *fwiw-- our mattress is from the same company and it's awesome too!
Here’s the bedframe I have, I quite like it. I think it would go with your room well. My only concern is that the wood in the below linked is a little bit reddish compared to the rest of your furniture. But, I think Zinus is a very good and affordable company to shop from!

We have this and really love it - super sleek, although not like the Thuma visually, but goes well with almost anything. Easy to set up, sturdy, and very affordable.
I think the black rug and black bookcase will look nice. Your room seems fairly bright and I think it could make it cozy. Honestly you could make any of the rugs work, a blue or green would be fun and would be a different feel to the black. With your flooring, I might consider a different bed frame, maybe a something like this or this?

My nephew has the one I linked in his dorm and he loves it. It's easy to set up and to get in and out of. The two of you who want to stay up late should probably split the cost of a canopy if your other roommate agrees to use since the sensitive roommate has the right to uninterrupted sleep.
My eyes water a ton when I lay down so I can't wear sleeping masks because they get really gross and itchy. So I understand your roommate's refusal to use an eye mask. The canopy seems like a good compromise on my opinion.
