Ha, you and me both. There are a lot of options out there, but none are super great that don't also cost a fair bit of coin. The floor is something you do need to keep an eye on for sure, but if you are religious about putting the cover on when it rains and for sure over the winter, then the floor should probably be fine. But as an insurance policy I wish I had the forethought to know that I would not be that responsible and had waterproofed the floor ahead of time.
That paint was my original plan before I just decided to throw in a new carpet instead. I have like 30 amazon packages of things that have stacked up for the boat because the flooring has taken so much longer to remove and replace than I originally thought it would.
I have had a lot of success using RAM branded mounts. I like them because I can swap out a cup holder for a phone holder, or a million other things. They are not the least expensive, but they are rock solid enough to be mounted on motorcycles, so you know it's not going to fail.

If you prefer a holder for a taller coffee cup, this holder would be more adequate. It would also require buying an appropriate 1-in ball mount and connecting arm.

I used these in a 1988 Caprice. Don't know if you want something flashy since they illuminate but it looked pretty cool IMHO.
Also to not Walmart sells these things cane Marine cup holders. I have the same yak. You'll eventually want to get a better seat for it. You can get decent dive boots on Amazon. I wear them because I get out and walk a lot while fishing the flats areas of where I live in FLA so having some foot protection is a good idea. One last suggestion is getting a scottie extender. It'll make a huge difference in reaching your rod if you keep it in the Scottie mount upfront :
