Start with a small batch just to make sure you like it. Chop up the habaneros, and put them in a quart-size mason jar. If you want to add other things like garlic, onions or the like, feel free. Or just straight habaneros. Now, make a brine - take 975 grams of distilled water and 25 grams of kosher or pickling salt (don't use iodized salt) and mix it together until the salt dissolves. Pour this brine over the peppers, leaving about 2"/4 cm space at the top of the jar. You should have plenty of brine left over, so pour some into a ziploc bag and seal the bag. Put this bag in the jar on top of the peppers, so that it holds the peppers submerged under the brine - you don't want any pieces of pepper floating at the surface, so make sure everything's submerged. Cap the jar (it's a lot easier if you get some lids like this or this), and set somewhere warm (around 70-80F). Within 24-48 hours you'll start to see bubbles and fizzing - fermentation is underway. It usually goes anywhere from a few days to a couple weeks. If you don't have those airlock lids, you'll need to burp the jars a few times a day - just crack them open a little bit to release the pressure. After 2 weeks or so, they should be done. You can then smoke them - take them out of the brine, and pop them into a smoker. Cold or hot smoke - dealer's choice. Fruit wood is best - peach if you can get it, apple otherwise. Smoke them for a few hours, then pop them in your cabinet to dehydrate all the way down and blitz them up into your powder.
My fermented hot sauce is burping less aggressively now.

I just double checked and they're called fermentation lids. Identical to the burpz other than being a different color and costing way less.

I just found out about these when fermenting sauerkraut. They fit any wide-mouth jar and you pump the oxygen out and lets gas exchange without letting oxygen in. I'm using them for curing right now. So far they work great!
I am using the bottles for fermentation, got the idea from Man Made Meads youtube channel and fairly closely followed what he did. I got the juice in the bottles, added yeast, covered with a paper towel (that I wetted with a little everclear) and out the lids on (very loosely to let the gasses out). I plan on taking them out of those bottles this weekend so they will have been in the containers for about 10-11 days. I do plan on getting some fermentation jars like these, just haven't gotten them yet.

Personally I like the silicone nipple type lid (like the pickle pipes that were mentioned), at least for things I'm familiar with. If I'm fermenting something new or something I haven't done in a long time, I'll break out the expensive, vaccum pump type lids.
I would probably use a proper airlock (5 peice, 3 peice are too hard to clean) but I haven't found a mason jar lid solution for those that I like.

I don't really think to use it anymore, I didn't really notice it having an advantage of over a regular lid with an airlock.

Great questions! I always recommend using a quality airlock. Kinda almost guarantees that you will never get mold growth so long as all your jars and the airlocks and properly cleaned. I then add the sauce while hot to my bottles, screw the caps and then invert the bottles upside-down untill they cool. This makes sure you have a great seal but now importantly it basically sterilizes the bottles. Labels and done!
These are what I bought, are and supposed to be a built-in airlock essentially. Unless I'm completely and utterly mistaken haha

This is where I deviate from this sub a little. I don't air lock and 'ferment' quite as much. Before I had a designated kimchi bucket (link below) I used to leave it out in the mixing bowl at room temp for about a day then cram it into a jar with a loose lid in the fridge. At first it won't be very sour (but it will be delicious) slowly after a couple weeks to a month it will start to sour (and be delicious). Basicly a slow ferment. The fridge doesn't stop the process just slows it down. I prefer this because I like to enjoy the subtle change over time.

Edit: Forgot to add, I don't worry about brine. If you are a bit concerned you can squash it down after a day or so. It'll have more brine then.
I didn't want to buy a full size crock for fermenting my kraut and peppers for hot sauce, so I bought some half gallon wide mouth jars and air lock lids. If you have way too many jars for your fermentations, I would use them for dry storage of bulk things like flour, sugar, rice, beans, etc.
I hope that helps for some ideas on what to do with your jars.

Jars are just some Ball wide-mouth that I just picked up at the grocery store with the groceries.
They sell Mason jars that have airlocks in the lid. Wine and mead homebrewers use them for really small batches. They're designed for fermentation. I don't think they're very expensive either.

I'm a week in and since adding brine, the cabbage is floating in the masonjar, there is an inch of brine before the cabbage, but the top is covered so hope it works out.
