I'm a big can of Chez Panisse Vegetables by Alice Waters. It's a classic. It's not old-world European in style but the techniques are there. She really knows how to bring the best out of produce.

Note I haven’t actually tried any of the recipes in here, but rather just took the three stage proofing idea (room temp, fridge, then room temp again). Looking forward to trying some of the recipes though

If you can cook at all, you can follow some of the recipes in this book. I am by no means a culinary master. If you can't find you favorite meals, you can make them! Make a date out of it. And if you are looking for a recipe not in the book, I can almost guarantee someone has broken it down and posted a recipe online. It has Mickey Pretzels in it, I have yet to make those, but I am looking forward to it :)
I have a Disney parks cookbook on let list that would make me smile! I had to cancel a Disney trip this past year due to the Pandemic which I was obviously upset about but this book would bring disney to my kitchen!! I want so badly to make dole whip and Mickey pretzels!
Aside from the others that have been mentioned (namely Bittman's HTCEVegetarian and the Moosewood books), I must recommend The Complete Tassajara Cookbook as well. The bread-only edition (included in this edition) was what got me started baking, but the overall cookbook is quite spectacular.
