I have the Coleman 40qt. Works fine without breaking the bank. It can be a cooler, or warmer, but not at the same time. You might want to think about alternate power source. One weekend mine did fine plugged into the lighter port, the next time, I had to get a jump start. Since have purchased a Jackery power station.

If that's the Coleman cooler I'm thinking of, the power usage is high because it's using a thermoelectric (peltier) junction that's pretty much always on. I can't recommend these, since they only cool about 40 degrees below ambient temperature.
A 12v refrigerator uses an actual compressor that cycles on/off as needed, and will maintain a cold inside in nearly all conditions. Smaller units can be found under $300 nowadays.

Context: Was looking for some DIY solutions for my current brewing setup. I'm finding over the course of my 60-minute mash, I'll lose 2-3 degrees from my standard 48-QT Coleman Cooler mash tun.
Didn't know if anyone has done this little DIY project to improve their cooler at all. A little concerned with drilling the holes inside the mash tun and might try it on the exterior to prevent the heat from stripping the seal and thus potentially getting foam into the mash. Interested in hearing your thoughts!

I suppose that depends upon how well-insulated your holding chamber is. In theory, you could probably cool it down to that range with just a few watts if most of it were enclosed in aerogels, but that's not practical.
You might be able to do it with a Peltier. Or gut a 12 volt cooler for the same parts.
An easier solution for the algae would be to add a tiny bit of food-grade hydrogen peroxide. And, yes- hydrogen peroxide is used to get dogs to vomit in an emergency, but I'm talking about 1 mL of 3% peroxide into a gallon of water. Should serve to keep down growth quite nicely.
