I'm new to this whole mason jar thing, but I'm interested. How does it work, does one jar typically contain one day's lunch? Or does it hold more? How does the concept of meal day Sunday apply to it?

I use Nalgene food container.
They are available in size from 4oz to 32oz. They are nearly unbreakable, they last for ever (I've had some for 20 some years) and they are leak-proof and tumble-proof. They go in the freezer and in the microwave (even with the cover on (unscrewed and slightly ajar)).
They go in the dishwasher, the cover too, but it will shorten their lifetime a bit.
Also I got some of these for my top shelf strains even though they didn't have the chalkboards since like you said I can just buy the stickers separately:

FIDOs aren't able to hold a full seal against much gas pressure from within. They will lift just a bit and allow gas to escape. I've heard it (and smelled it!) and I have never lost a FIDO to an overpressure event. But, I'm talking about the regular, storage jar size with a fairly large lid (like this https://www.amazon.com/Bormioli-Rocco-Fido-Square-4-Ounce/dp/B00471MP42/ref=sr_1_2?ie=UTF8&qid=1488553794&sr=8-2&keywords=bormioli), not a bottle with a smaller swing top (like this https://www.amazon.com/Bormioli-Rocco-Swing-Glass-Bottles/dp/B01068MRJ2/ref=sr_1_12?ie=UTF8&qid=1488553794&sr=8-12&keywords=bormioli). The bottles WILL explode, but those smaller tops fit tighter. I have never heard of one of the larger jars exploding.
If you are going to use the "loose lid" idea, don't use a metal lid and band. Those corrode quickly in the acidic atmosphere of a LAB ferment. You can put a sheet of plastic wrap between the metal and the ferment to protect the metal, but I just prefer the plastic replacement lids..

I'm not sure that mason jar lids are designed to seal well if the contents are under pressure. Normally when canning food you boil the jars, which causes the contents to expand and forces some air out. Then when the contents cool they contract, causing a vacuum. The button in the lid to pops down and provides a tight seal. Obviously you wouldn't do that with beer.
I use these bottles for bloody mary mix and other liquids, they have one-piece screw on lids instead of the canning jar large lid-and-band configuration. I haven't used them for beer, but I suspect they would do the job.
But at this price you might as well just buy cheap 32oz growlers... Or you could even try something like this
