Sure, and we just filled our shelves with books with perspectives from all over the world. I really liked the Jon Muth books. You won't be able to change your MIL, but you can use those moments as teachable moments for your children. "Isn't it wonderful that there's so much variety in the world?" "How great that all religions teach people to be kind to each other?" that kind of thing. Even Santa is a story in our household about St. Nicholas gifting the poor and how Santa is a way we honor that tradition. We aren't religious, but we are kind. It's also a good way to teach coping and conflict resolution with dealing with situations you can't change. You can teach them how to react.
My husband and I went out to an antique/thrift shop where I found a hardback copy of <strong>I Want My Hat Back</strong> by <em>Jon Klassen</em> for 25 cents in MINT condition. I excitedly showed it to him. My husband loves hats (He likes a Straw Panama Style Hat in Summer and a Felt Hat in Winter) but had never heard of this book. He read through the book and LOVED it (he even giggled) and said, "We have to buy this book...you know, for the mini hat wearers that may come into our lives at one point or another."
LADIES (AND GENTS?) THIS IS A MONUMENTALLY MASSIVE HUGELY BIG MOMENT FOR ME.
He's been a fence sitter since forever and seeing him come over to the baby side is heartwarming for me. I kept it cool. I didn't say anything (For when the tiger stalks the gazelle... it is silent.)

I’m a big fan of defusing toddler temper tantrums with silliness if possible. Do you have the book I Want My Hat Back by Jon Klassen? The first thing that came to mind was to read this book and then if she still freaks out to tell her “My hat is gone! I want it back!”

Id really recommend this book
This is definitely an American phenomenon. We are fed a steady diet of "Stranger Danger" type stuff, especially older generations. Here is a perfect example of a popular little kids series the Berenstein Bears (I don't know if they are well-known outside of the US -- they have been around since probably the 70s/80s).

Get him "We're Going On a Bear Hunt"! It comes in a board book, has the repetitive rhythm your boy likes, and involves a search for a bear.
This reminds of the Berenstain Bear story where Papa Bear was racist against the Asian Panda Bear family that moves in across the street. Bamboo fences are evil. Racist Papa Bear

This adorable children's book is so fun to read. You need it for the kid that I assume you have in your life because of the other kid things on your wishlists :P (like the training urinal.... lol!)
We have a book called Zen Shorts. It has 3 stories. 2 Zen stories and one Taoist.
I have a ton. And I have a large collection of children's books now as I'm in school for elementary education. But I'll just leave you with just one. The illustrations of the position of the bear on the chair are the best part: Tops and Bottoms by Janet Stevens. She came and spoke to my school when I was in elementary school. I'm sure thats why the book had such a profound effect on me. Many life lessons in that book, let me tell ya...
That sounds like it would be one of my favorite Berenstein Bear stories, if I actually remembered it--but I don't.
