RPM isn't that strongly correlated to decibel output. I have a very acoustically open case and the card is almost inaudible under most gaming conditions. It's really impressive.

Not with an M.2 connection no.
But if your laptop has a thunderbolt 3 port, then you can.
You’d leave the Thunderbolt Adapter on your desk with the GPU always installed, connected to the monitor/TV and plugged into power.
Then when you get home, all you have to do is connect the one Thunderbolt cable in and get playing.
Not a cheap solution, but elegant and easy to use.

I used a pair of Puget Systems Acryllic GPU Braces when I ran two 780s in SLI. My replacement card came with a reinforced backplate that pretty much negates any sag in my configuration, so I don't have them in place currently, but it did a good job at the time.
"Bracket" may have been the wrong word to use in my post, by the way; "Brace" will likely get you better results. For example, here's an Amazon Search for GPU Braces.
Your best bet is to go with something simple with decent reviews. The Puget ones get slammed because of their logo, but the mounting system and support are generally pretty solid, and I've heard good things about the aluminum ones as well. At the very least this should get you on the right track.
Pugnet Systems sells an acrylic GPU brace that looks good in any system. It's worth the investment, trust me.

So I just ordered the exact list you provided, with this case instead. I'm sorry if this is a stupid question but I want to make sure: should I order any extra fans? Does the cpu come with a capable heatsink?

You could add a bracket, u/TinyTim711 linked a premade one in this thread nad there is also one made by puget system (amazon link) but you could also make custom ones (or have them made), depending on your volume it might be echonomically convenient. As other have said SFF PCs are a good choice for transport and to reduce the wiggle and so are AIO coolers instead of towers. Try asking in r/sffpc too. There are also highly integrated prebuilt pcs with water or even passive cooling that would probably be a good option out of the box but might cut you out of the deal.

as long as you have a thunderbolt port on your laptop, you can buy a GPU along with an external GPU adapter, although it'd be fairly expensive.
i don't have any personal experience with this kind of thing, but i would probably recommend something like this, as Razer is a reliable name brand.
as for choosing the GPU, i'd recommend choosing something from here, you can sort by memory.
Remember: your laptop needs a thunderbolt port for it to work. It's the port that looks like an iphone charging port.
Also, you'll need an external monitor for the GPU to connect to.

If you want something similar to the case you have there(cube), this is a nice case that I have built in myself. BUT it's mATX. Which means you need a smaller motherboard. Not an issue because there are plenty of mATX motherboards available well below what you have in your cart anyway. Everything else you have is really solid though. Good brands and models.

If you prefer a micro-ATX case which will look better with your motherboard, you could get the well-reviewed Cooler Master Masterbox Q300L.
It's cheaper and smaller than the case you have choosen. It has good airflow, and should accomodate you choosen components with no issues.
