Edit Saw this is asking about the history of collecting wine. My bad. Hugh Johnson's Vintage talks a little bit about connoisseurship but I really can't think any book devoted exclusively to the history of collecting wine.
I really enjoyed reading Sokolin's Investing in Liquid Assets.
Playing around with First Growth Bordeaux and California Cult Cabs are a little rich for my blood but Sokolin gives useful tidbits about vintages and gauging cellarability, etc.

Unfortunately I don't have access to the book as my a toxic former friend had lent it to me. I would absolutely have scanned some pages if I did. But that is what I'm basing most of my arguments on.
You may find this useful. If you have a Kindle account its free, but much of it is viewable on the "Look Inside" feature. It was written before apps were a thing so you could probably find apps that are easy to navigate with similar info.

I've been trying to find a free or at least a cheaper version of This book on Amazon I'm Canadian so just the eBook is over $20. I posted a task a few days ago but no one was able to find it.
This is an interesting book that might point you in the right direction.
