I have a big ass one but it's kinda pricey compared to most, especially random Amazon ones. But it's 4 quarts & does more than frying so i think it's worth the money (although I got it for 1/2 price thanks to gf's cousin who works at a retailer & gets 50% off every so often).
When I was living in an apartment, I used this indoor grill that got really close results to a gas grill. This is the larger version that's a lot bigger. Never set off our smoke alarm, we just kept it under the oven vent just in case.

Pricey, and I mean, I got mine as a Christmas gift, but shoot. It's freakin' night and day. Killer chili dogs, I'm telling you. Killer dogs, in general. And tons of other stuff. I made an awesome roast on my counter without even trying yesterday.
Sadly, there is actually not a great Chinese hot pot restaurant in Ann Arbor or Ypsi. Even the so-so hotpot options (at Evergreen or Ybor Yan) are closed because of the pandemic.

they now make combo machines that will bake, roast, air fry, and grill foods. it's crazy! I want the ninja foodie because we like grilled foods and it's getting to be more and more of a hassle to grill outdoors.

Those things got me through college. It's literally just like another kitchen utensil like the stovetop, microwave, or oven. It's just a mini grill. When I was a teenager and worked in a concession stand we made hot dogs on one of those and would cook 20 at a time.
I've never used a grill pan, but I have always had luck grilling indoors using a product like this:

You don't necessarily need to get that brand or that size, but those style indoor grills have made many a delicious meal for me!
The only downside to this is the nonstick coating that can easily come off if you are too rough. I recommend cleaning it first by letting it cool to a temperature that you won't burn yourself, then wiping the grates with a damp paper towel.

Hamilton Bean makes a pretty nice "Searing Grill". It's not like your typical George Foreman type of electric grill that smashes your food from both sides. It can actually get really hot too.
The newer models of it like the one I posted in the link also include a glass window to keep an eye on your food as it's cooking. Earlier models of it didn't have this.
I got one of these grills a few months ago. Just wrap the grill in tin foil and cleanup is a breeze.
It's 1500 watts and has a griddle plate too. I cook most of my meals on it. I've been using it for about a week and love it.

I cannot sing the praises of the Ninja 6-in-1 kitchen appliance enough.
My wife got me this for my birthday, and I've been using it every day since. I primarily use the air fryer function, but use the grill last night for an indoor burger night and it turned out fantastic. If you want the easiest meal prep ever, this is it. It's a major time savor, because while food is cooking in it, I knock out other chores around the house or prep other food that doesn't require grilling or frying.
Christmas is coming up. If you're getting some amazon gift cards and want something to spend it on, highly recommend one of these. This and an instant pot is basically having an entire kitchen.
Look on Amazon for a “personal electric hot pot”, they are about 2L, and is more than enough for 1 person. The only down side with a smaller electric pot is, like all electric pots, they heat up slower. But if she’s just doing it by herself it’s not bad. It’s also nice to have to make congee, or boil noodles as a personal pot.
This is another one I would recommend , this is big enough for 2-4 people but still good for 1. It’s big but not deep, so it’s not huge like the ying yang pots. This also doubles as a grille if she ever wants to make bbq. It is faster than the pots mentioned above, and very versatile. I actually had this for four years before I moved and bought the smaller electric pot I mentioned above. Highly recommend this, especially at the same price point as the smaller pots above.

What do you mean by "sandwich them in the grill?"
Check out something like this, Indoor Propane Grill. You can set this baby up on it's own little island, or just prop it on the dinner table, and cook as you go. The one I linked has a glass viewing window, so you can watch your food cook.
But ideally.. nothing should stop you from making yourself some good BBQ, sun, wind, or snow!
So this is approximately my usual meal, almost always 4 eggs, the meat might change, the veggie might change.
To start off I put 2 tablespoons of ACV in a shot glass, top it off with water and slam it like a tequila shot.
Then I make a collagen protein shake with almond milk, blueberries and chia seeds and drink it while I prep my meal.
Then I have my 'appetizer plate' which today was avocado with garlic, sharp white cheddar cheese and smoked scallops. I try to eat one fish/seafood a day or I supplement cod liver oil.
Then by the time I am done or close to being done my main plate is ready. I got some broccoli, 4 eggs and a steak...all of it covered in butter. So I didn't get Mission Accomplished today, I had one of those broccoli quarters and a few ounces of steak left but that's ok, I will eat it on my appetizer plate tomorrow with some cheese.
Calories: Pretty high. Macros: Whole bunch of fat, a lot of protein, there is some carbs in there guessing 10 net carbs. Deliciousness: 10/10

Not sure how big you are trying to go but I would go with this Cuisinart GR-150P1 GR-150 Griddler Deluxe, Brushed Stainless https://www.amazon.com/dp/B008EYOPPU/ref=cm_sw_r_apan_glt_fabc_7FDEGB4D8S36N6SAQ1ZV?_encoding=UTF8&psc=1 I love my Blackstone 36 in griddle but the e series won't make the cut to sit on my countertop. It looks cheap and not durable. If I was a bachelor it would go well with a George Forman grill in the counter.
I purchased the Ninia Foodi which is built way more solid than the other cheap ones out there.
The amount of space to work with is also better imo.

Airfryer use so little oil to fry stuff that I’ve been on the same container of oil for a year.
Airfryer wings are amazing, all things you would fry, for the most part will come out great in the Airfryer with much less mess and clean up.
Reheating foods like Pizza is fucking top tier. I don’t think I can eat left over pizza anyone if it isn’t Airfried.
With my Ninja one, there is very little I can’t do with it, it doesn’t take up much space which is great because I have a small kitchen and it frees up stovetop space when I am cooking big dinners.
Big plus:
Frozen foods like Hot Pockets and Pizza rolls are 1000x better in the Airfryer.

I have the Ninja Foodi 5-1 and I love it. If it was an air fryer, I probably wouldn't use it that often, but I use this all the time for so many different things. Especially the grill function, since I don't have an outdoor grill. So yeah, I totally agree that a pure air fryer might feel like a waste but part of a combo can be great.
Really, the amount of things you can put there and get amazing results is mindblowing. And it warms up super fast.
