I went to list a book on Amazon, then realized it was veg out and nowhere so took it down. The book is bowl by Lukas Vulgar. Solid exposure to veggie based broth/noodle/asian quisine stuff. A really nice plant based overview for pho, ramen, etc.. good stuff! book on amazon
Cheese tastes pretty good and has little carbs also maybe try eggs if you haven't. Good luck!
