I grabbed one of these and used it with a Dualshock 4 I already had. Works perfectly.
I used a relatively cheap recorder, the Zoom H1 (Amazon link)
Set it to the highest recording quality, which is 24 bit/96 kHz WAV. The key is getting the levels right so there's no clipping. I intentionally set the levels very low, the highest peaks only hitting about -12 db on the meter, knowing I could raise it up later. I didn't want to sit there obsessing over the levels the whole time, that wouldn't allow me to enjoy the show.
After I copied it to the computer, I normalized it, cut the tracks apart, and had a friend who's an audio engineer tweak it as well. He added a compressor and tweaked the default settings a little. That's it. Normalize, compressor, export and convert. No EQ or anything.
Given how small and cheap the recorder is, and how little processing was done after the fact, I am really impressed by how well it came out. It's certainly not perfect, but for spending literally zero dollars on this (borrowed recorder from a friend, used free software) I think it came out pretty damn good.
With any camera that has good video, but no mic input, you plug your microphone into either a phone with an audio recorder app, or a dedicated external audio recorder. (Here is an example.)
Synchronization is important if someone is speaking on camera, and this is usually facilitated by having the on-camera talent doing a single clap once the video and audio are rolling, which gives the editor an easy point to sych the video track with the audio track. in post production. This isn't hard to do at all.
The external audio recorder gives you better sound control and options than all but the most expensive cameras, and I have completely stopped recording sound in camera even if the camera has that option. Each person now gets an audio recorder with a laviler mic and the whole thing is brought together in post production.

At that budget, I'd recommend a portable recorder, like the Zoom H1: It'll get the job done, and will work just fine for this purpose.
I googled its price, out of curiosity, Amazon is selling one for 109 dollars.
Of course, if quality is really not an issue, then yes, you can always just use your phone; Just don't expect professional-level quality.

I actually don't use this very much because most of our discussions/arguments happen in front of the two cameras we have for security/kids safety so we just "review the tape". I use this a lot because I'm overly sensitive to his feedback and often hear a tone when there isn't one.
Then for texting, when I start getting emotional I say, hold on I can't talk (which is usually true cause when I get mad I cry 🤦♀️) then text him my responses. I use a technique we learned in couples counseling which is to repeat what they said back in your own words, but I do it via text. Then we can go back to the conversation later.
Generally we're finding that he's very literal and I tend to use connotation and barrel forward with imperfect language assuming he'll understand the intent. So we're both working on meeting in the middle.

I use a completely separate device to record my sets. I have one of these (except mine is older and doesn't have the usb built in).
Parents need to give their kids recording devices. Zoom meetings were an eye opener. But the problem hasn't gone away.

You can power it with the ps2's usb (i did this with the fat model port at the front. It says it supports wireless though i had trouble with that. Works beautifully with ps4 controllers wired.
I bought 2 for multiplayer. One of my (2) usb ports were taken up by the power cable for my hdmi adapter, but i found i could power the second gam3gear brook by plugging it in to one of the ports on the other one.
Bear in mind ps2 era's game mechanics make FPSs a little more clunky than nostalgia tinted memory will remember, I still managed to complete tsfp on everything other than co op with these
If your computer has only one audio Jack, it’s a mic/headphone hybrid. The technical aspects of the hardware are explained above.
You can get a trs to trrs adaptor for pretty cheap so you can run the audio in to the computer. But I don’t know if that will match the contact points you want to connect inside the computer.
Audio input will be mono, not stereo
Best bet is to invest in an interface.
A zoom h1 has a stereo line in that you can plug your PO into. Then plug it into your computer and pull files like a hard drive. Or, it could work as an interface. I use the H5 for that purpose.

Then, once you have the audio recorded, you can import it into a DAW (like Logic) to process the sound however you want.
