First, use this calculator. It will tell you what your goal calories should be for a day. Try to aim to lose at MOST 2 lbs a week. Anything more than that is unhealthy and unsustainable. 1lb/week is realistic and won't leave you too hungry. You WILL be hungry if you try and lose 2lbs a week.
Exercise doesn't really matter for weight lost, it's much more about what you consume for calories. However, if you want to walk/run/lift weights it's good for your overall health - but it won't make you lose weight. Make sure you account for those calories in the calculation (for instance if you burn 350 calories on a run, that's 350 more calories you have to eat that day).
For food, buy this book: It is so tasty and everything is low calorie. Hands down the best cookbook i've had - you get to eat real food and it take 20-40 minutes a meal in a single dish. PAY ATTENTION TO SERVING SIZE, don't go over it. Get a food scale if you can.
Food is basically the only thing that matters for weight loss, you can't out train a bad diet.
Source: I lost 20lbs between Jan 1 and Mar 1.
Cook it In Cast Iron is a great cookbook which goes into the seasoning process pretty well.
Cook It in Cast Iron: Kitchen-Tested Recipes for the One Pan That Does It All (Cook's Country) https://www.amazon.com/dp/1940352487/ref=cm_sw_r_cp_api_glt_fabc_SNXYFEG0TZW4J18V1VSZ
This is my absolute favorite! This also explains the how and why cast iron works, and it ranks cookware by brand and material.

For English-language, we always recommend Memories of a Cuban Kitchen.
What I like about the Deep is that I can fry / sear meat without making my cook top a mess. I'm very heavy handed with stirring and frying, lol. I just made chicken adobo last night from this book, and it was really good! I've also done a vegetable soup that was a family hit https://www.allrecipes.com/recipe/182112/carrot-potato-and-cabbage-soup/.
Just got this book, and am excited to try out some recipes "The 5-Ingredient Dutch Oven Cookbook: One Pot, 101 Easy Recipes" By Lisa Grant. I'm still a bit of a novice when it comes to the DO.
Congrats on your new DO!!
Please look into How to Cook Without a Book
I like this old version because it feels more accessible to me. But the New version
is a game changer for me.
The reason I like this book is because instead of specific ingredients, it gives you the basic formula with lots of suggestions.
And it tells you how to cook them. Learning cooking methods is way more important than ingredients!
And YouTube is useful sometimes. Just be careful. People will post anything to get recognition.
But my best advice is figure out a couple of recipes that work for your family. Yes, you’ll have to experiment. And sometimes experimentation can lead to ordering pizza but you have to try or you’ll never get comfortable cooking. You can make the same thing repeatedly, just with different ingredients.
I hope this helps. Best of luck!
Emily and Matt Clifton over at Nerds with Knives recently came out with a Dutch oven cookbook. Haven't had a chance to purchase it yet but it's on my list!
Your husband can cook for the family if he's so critical.
That said tray bakes, slower cooker meals, instant pot meals, etc. can have a lot of flavor.
I love this book - https://www.amazon.com/Skinnytaste-One-Done-No-Fuss-Dinners/dp/1524762156/ref=mp_s_a_1_1?keywords=skinnytaste+one+and+done&qid=1647958515&sr=8-1
Onion, garlic, salt, and butter are my BFFs. Lemon brightens up dishes that need something extra. Etc.
She also has a 'One and Done' book, some recipes are one pot but all are one vessel. https://smile.amazon.com/dp/1524762156/
A favorite from the book is Caldo de Papa (Potato and Short Rib Soup). You can see a list of all the recipes here and what you cook them in to see if you might like it
This is the book I learned from when I first lived by myself. It goes through general techniques with guideline ratios then provides a handful of example implementation recipes. The approach is unspeakably helpful to stare at the fridge and pantry then come up with something based on what's available.
Check your local library for this book. The recipes are probably for 4-6 people, you can usually halve a recipe without issues.
Do they have an Instant Pot?
A lot of my meal prep and cooking was streamlined and made easier with an Instant Pot. It's a wonderful device. If they do, this book is great!
I've got some of her butter chicken and extra sauce in the freezer now... so good! She knows her shit, and I dig her cookbook. https://smile.amazon.com/dp/1328577864/ref=cm_sw_r_cp_apa_i_0xwwDb94AEDF2
Because others have got you covered on the jerk chicken front, I'd just nice to add Memories of a Cuban Kitchen to the list. Nice cookbook.
From reading a bit in the book, it's not for stews. it's also not a braise.
from what i understand(i'm a noob), most of them are probably similar to the one-pot chiken/rice.
here's the book with table of contents etc:

Both of my parents are from Cuba and, prior to that, all of my ancestors came from Spain. I live by Mary Urrutia Randelman's Memories of a Cuba Kitchen and make a fair amount of Spanish food as well -- summer basically means tortilla española and tinto de verano. We've been multiple times to visit the parts of Spain that our ancestors came from (Galicia, the Basque country, and Asturias (by way of the Canary Islands)). We celebrate Noche Buena instead of Christmas day. We listen to a lot of Cuban & Spanish music. My sister and I are English-dominant now but both speak Spanish with our parents/extended family. Probably a bunch of other, smaller things.
