Other things that work:
Mostly I cannot stress enough that students need the opportunity to engage in productive struggle with a text. So often we see kids struggle and step in and do the work for them, or we let them skip words. This doesn't work. Encourage students to ask questions and take breaks (but not quit) when they get frustrated.
I am a Computer Science educator. I teach classes 6th to 12th grade as well as run specialized classes for higher level, non-age specific groups.
I would recommend Grant Wiggens' and Jay McTighe's Understanding by Design as a book for curriculum development. It is a great starting point for creating curriculum that can be evaluated and iterated upon.

Also called backwards design, it focuses on starting with the learning outcomes for a lesson or unit then the product that will show student mastery of said learning and then breaking it down into teachable steps.
UBD was the process I used when I started. At this point in my career I tend to, as others have said, just wing it. Though I do pull the proxy back out if I’m struggling with putting together something new.

1) I guess that you chose Why is religion controversial as your final module.
2) I think your second and third choices would be "Crime and Justice" and "Living Political Ideas."
3) I think the most interesting would be "Why is religion controversial?" because I have a fascination with learning anything and everything I can about all religions.

It shouldn't be overwhelming if you prepare properly. Try to at least get your hands on intermediate level micro / macro texts and read through them to understand the basics. For an econ MA you don't need a ton of math. I usually suggest this Schaum's outline because it covers the needed areas up to differential equations and it has a lot of problems to help you learn the material. Add any decent introduction to econometrics, e.g. Stock / Watson, and you should be set.
Keep in mind you don't need to know everything in those textbooks, so don't worry too much if it looks like a ton of material. What you might want to do is try to get copies of the syllabi for the undergrad courses in econ at the universities you're applying to for an MA. That way you can see which textbooks they use, what material they focus on, etc.

The current president's administration is very much "him" and he runs it dude, this is what I'm saying. The point is, Trump very clearly accused Obama of this and you aren't being intellectually honest if you don't think that.
