I carry a knife with me every day. Here it is. Just today I used my knife for the following:
On my way out the door noticed an Amazon package that got delivered yesterday. Cut open the tape, took out my item and then cut up the box to put in the recycling on my way to my car.
Noticed a frayed piece of thread in the passenger seat of my car. Cut it off
The little split tab on my granola bar wouldn't open. Cut open the package
Was visiting a customer we're were trying to determine what type of spring was in a seal we provided them. I cut the seal in half and then cut the spring out of the rubber to get a better look
Back at the office I got some mail. Used my knife as a letter opener.
At home my wife asked me to look at the dome light in her car, it wouldn't come on. There is a little tab to put in a screw driver and pop it out. Used the tip of my knife.
I'm guessing it's really one of those things that if you don't carry a knife, it's hard to imagine what you would possibly use it for. On the other hand, for those of use that carry one every day, I can't imagine what I would do without one. It's a tool, and you'll find uses for it.

that's not really accurate. it's pretty much the most common size for a folding knife actually; in many states a folding knife with a blade over 3" can be considered a concealed weapon. plus, big knives are harder/heavier to carry and have no real use for the 'extra' length to justify the annoyance of carrying it. most adults who carry knives around with them (there are legit reasons) would have one of around this size.
the official BSA knife is 2.75". so is the one i have on my desk right now, which I'm sure many thousands of adults carry around.
That's a Benchmade 940. These retail on amazon for $180ish. Being a prototype certainly adds value, but I'm not sure how much. Likely worth $250-300, but could be worth as much as $500 depending on the buyer and how rare prototypes are.
The Kershaw Leek is on sale for $30 from Amazon. It's made in the US out of higher-end steel than the options you mentioned and the other suggestions. This means it will stay sharp longer, though 14C28N is still very easy to sharpen.
Kershaw's warranty service is also excellent. It's a lifetime warranty and pretty much no-questions-asked. Small parts are available by mail free of charge. Even if you break a blade through abuse, they'll only charge $10 to replace it.
A Swiss Army knife isn’t a good option for self defense, a good folder with a tip up pocket clip would be a better option. I carry a pocket knife in my waistband for this purpose everyday. It’s a bit different for you than me as I’m male and wear pants or shorts whenever I’m out. The important part is practicing getting it out and in action because it can quickly become a bad thing if you don’t know how to use it. You should also look into some basic self defense classes to go along with it as you can do a lot of damage with your body in a fight or flight situation. Lastly, know when you should fight or just give up, you can escalate a situation very into something else entirely when you could have ended it by giving up your purse or whatnot. I take my and my family’s safety very seriously, the cops normally get there when it’s too late. If it’s Legal where you live, you can look into a concealed handgun license, take basic and advanced pistol training and you will definitely be ready to handle a life-threatening situation.

Titanium is not an ideal knife material. A stainless steel blade, even one made of cheaper steel will perform better than a titanium equivalent.
The knife you linked is not titanium, I think they are claiming the coating is Carbonitride Titanium but the blade itself is good old AUS 8. Which is a decent steel. If you like that knife, it would probably work just fine.
In this price range, I was going to recommend Kerhsaw, Benchmade and Spyderco. But, I just looked through the UK amazon store and your choices are really slim. So, I looked through the store and picked a couple solid choices.

Best bang for your buck I'd go with the OKC RAT II. This is the AUS-8 steel option. Easier to sharpen but doesn't hold an edge as long as D2 steel which takes more time to sharpen but holds its edge longer. If you plan on taking a sharpener go with AUS-8 otherwise D2. They're incredibly durable and just under 3 oz. I've carried the same one every day for 3.5 years and it's still going strong. It's my favorite knife by far and the scales and design give great grip and feel in hand.

That seems about right to me too. The knife is only like $15 so the number of people who would go spend extra money on replacement washers is probably extremely small, meaning little to no economy of scale. The logistics involved definitely cost more than the washers themselves too. I think $12 is a reasonable price to ASK for washers.
With that said I don't think it's a reasonable price to PAY. If you're going to spend $12 on a $15 knife, just buy a $30 knife that already has bronze washers.
This is one of the knives that most gets people ragging on Ganzo for making knock offs / clones. For comparison, take a look at the Ontario Rat II.

I can't even imagine having a knife that can't be opened by one hand or clipped to a pocket. Get a $20 kershaw knife and clip it to your pocket and you'll see how often you pull it out to do something.
I use mine for anything from opening boxes, cutting strings off of the carpets to fixing my car's cooling system and, rarely, cutting off broken nails...although the last one is still better done with my teeth.
But for real, get one - a cheap one, I found my first knife near a bush in a club, and clip it to your pocket, it will find its use...
By the way if you're ready THIS is in many circles regarded as a best all arounder knife for every day carry. I found the silver one and then bought the black one when the silver broke (lasted 5 years and I broke it because I'm stupid, not the knife's fault). It's nice steel that holds an edge pretty well.
I'd choose the Buck 110 Folding Hunter.
US made, easily recognizable classic hunting blade, easy to use, has good quality and comes with a leather sheath for easy storage.
You could also engrave it to make the present even more special.
I carry around a pocket knife. And I keep it sharp. This is something I was doing as a guy that I have no plans to stop doing. It's really convenient for many non-combative reasons and it makes me feel a bit more secure in situations like this. Sometimes when I'm in a scary part of town I'll keep my hand on it.
It keeps me handy and badass, too. Everybody loves it when somebody has a knife when it is needed. I love the idea of being a girl who whips out her knife! Happens at least once a week, or constantly at work. The one I have is green and cute, but razor sharp, durable and efficient. I've been thinking about getting its smaller counterpart in purple for when I want or need it to be smaller.
There are plenty of great valur brand knives right now in D2 steel, a lot even on Amazon. Civivi, QSP and Sitivien to name a few. Price range from $30-$50. Depending on what esthetic they are into. I just checked and the Ontario Rat II is on sale for sub $25 as well. A tried and true brand and model with a great reputation.

It’s coming in handy because I recently ordered like two dozen items during Amazon Prime sale. I wish I discovered decent knives earlier, would’ve spared my butter knives a whole lot of trouble!
A little bit above you budget but well worth it.
It would cut food up. It will not last long, and the blade will dull very fast. It's a cheap clone of a classic Buck knife design, but about 1/10th of the cost.

Yeah I'm kind of spoiled by that box cutter, in a way. It's just a simple metal wire clip but it's actually got the perfect amount of ramp and tension to slip onto my jeans pocket, and it's fairly deep carry. Not that it needs to be deep carry when it's dangling outside of my pocket, but it means that almost the entire body is hanging below the clip and it's not sticking up over my pocket the way something like the FC11 would. I didn't work at the hardware store for long, but that was the first time I really carried something like a knife or light every day so I got used to it, and now I judge everything based on that experience, so I guess I'm pretty picky too.
I bought an Ontario RAT 2 just to have a simple folding knife and man, the pocket clip on that thing has a tiny amount of ramp and an insane amount of tension. I don't really want to loosen the torx bolts holding it in place in case it causes the clip to eventually free itself and fall out, but I really don't like it the way it is stock. Most flashlights I have aren't nearly as bad as that, but everything has at least one thing wrong with it that bugs me, and the Zebra is the best implementation I've seen so far.

I'll elaborate though. The laws are all readily accessible (I'll send you links if you need) but in California you can carry any locking folders, including assisted knives, aside from certain counties like LA. Autos have to be less than a 2 inch blade and fixed blades need to be worn openly. Something else to consider is your university's policies on the matter. As for the knife choice, the one you linked isn't going to last and the army shit printed on it is tacky.
