I am trying to learn Thai! I’m pretty good at languages, so there are a fee things that I picked up just by watching bl, but I also downloaded a few apps to help.
I use Mondly with a premium subscription. I think it’s $15 usd a month, and it’s really food for vocab. There’s also a feature that grades your accent.
For learning the alphabet, I’m using an app called Write Thai (or Write it! Thai). You learn the pronunciation of the letters as well as how to write them.
I also purchased this book to help learn writing the letters. My writing looks like a 5-year-old still 😆

Great book by Italian journalist-writer Terzani. It talks about a peculiar year of its life when he forced himself to travel without planes because of a fortune teller.

This book was required reading for me before I studied abroad in Thailand for 4 months. Not all of the stuff was 100% accurate to my experience, but it helped a ton to have that info under my belt before I left.
I know the main thing for guys on my program was that they had to be clean-shaven. We were university students though, so it had to do with our uniform. I'm not sure if that will be applicable to you.
Generally, you'll see Thai's breaking "rules," but that's because they know how and when to break those rules.
Go to Honduras! supposed to be fantastic diving and parties there. Check out a book called 101 places to get fucked up before you die. Really good info in there.

You probably want somewhere that caters for westerners with the comforts of home. I'm sure you don't want to be eating spicy papaya salad every day.
Some people choose phuket because it has lovely beaches, many restaurants that cater for westerners and easy access to an international airport. However phuket can be expensive.
If your looking on the budget scale then Chiang mai is a good option. For me I didn't like the smoke/polution during the burning season when farmers clear land.
Jomtien near Pattaya is a popular choice for many retired expats. With a glut of cheap Condominiums and many cheap restaurants on the beach.
I would think about going to a place and staying a few months then trying the next place before you decide to settle.

check out A Fortune Teller Told Me. It's a travelogue from a journalist that traveled around Asia only by land for a year, and it's a good read.

Many Thai dishes do use sugar. Generally palm sugar, but never more than a tablespoon per recipe, which can serve anywhere from 6-8 people. So that's really not a lot of sugar. (I feel like American Thai restaurants use a tablespoon per serving!) It should be a part of the flavor ensemble. So it's just a matter of quantity. My mother learned in Thailand but she had a bevy of Thai language cookbooks. She did use one cookbook in English that she said was very authentic: The Beautiful Cookbook: Thailand.
Whenever I use this cookbook the dishes turn out very good and not too sweet.
