Decibullz sells a custom mold for the ear. Comes as a plastic mold that you drop in boiling water and then put in the ear and mold. Comes with 3 different sized rubber pieces and a foam piece for different ear sizes. I use the one they sell for "surveillance" and can switch the plug when I go shooting. They are custom molded to you ear so they are more comfortable when wearing for a long time.

They are great as long as you prep your ears for the molding process - nice and clean with the removal of as much hair as possible.
A few years back when I had my triumph street triple, I ended up getting some custom made ear plugs made while I was at bike fest in Las Vegas. I’m not sure of the brand though. I’ve also been looking at these on Amazon
Why don't you order a moldable earplug like this? You should have enough time before the show for a better earplug than disposables.

They custom mold to your ear, they're super comfy, and they're intended for shooting, so they handle most anything that'll happen on a construction site. JW that I worked with in my apprentice days turned me onto the brand. I use them for work and for riding my motorcycle. Though on lighter jobs I just use noise canceling earbuds while listening to music.
Headphones generally aren't good at reducing sound. Sound bothers me too. I tried shooting headphones, construction headphones (these grip your head hard, but you get used to it). I like these the best:

You can use shooting or construction headphones over them too. Active sound cancelling headphones are another option, but I've always liked passive sound cancelling better.

To be totally honest, I rarely use them for around the city- but I always use them for any highway riding. Generally, it isn’t the street noise that will mess up your hearing - but rather the constant wind noise from highway riding. IMO earplugs are a must for any highway riding.
I got the Decibullz on a complete leap of faith, and they are great. Walker Razor alone are not enough for me, so i got these thinking I would wear them under the Walkers, but they are more than enough on their own. I had a little difficulty this past weekend with an AR pistol knucklehead next to me that had a compensator blasting at me, but unless you have something insane in the lane next to you, the Decibullz are great. I wasn't thrilled taking a risk at this price, but the gamble paid off. And i can actually have a cheek weld without the earcans getting in the way.

give these a shot, the hard material forms to your ears so actually it ends up being less pressure than even foam plugs, since those have to expand to fill
this is relatively cheap, they work great (used to use them for raves and such all the time), and will give you an idea before you decide if you wanna invest in something more properly formed to your ear

These also aren’t electronic - which you may be referring to. Those are like $250 now. I recall when the electric ear canal ones were being newly marketed to retail shooters and they were incredibly expensive (like the $1k price you referenced). Prices have come down substantially though for equivalent ear pro.
Of course you can spend a lot more, if that’s your thing.
But the over-the-ear ones are better anyway. More comfortable, faster/easier to put-on/take-off, and harder to lose. The ultra-expensive ones are more of an ostentatious display of disposable wealth because they don’t really provide any marginal utility for the extra cost.
I wear ear plugs with percussive filters under my electronic ear muffs so I can still hear things.

These claim to be and they are custom molded after you heat them up. I may order these actually. I lost my custom ones from an audiologist.

I know it's not the same but if you're looking mainly for some ear protection but still be able to hear, concert ear buds are pretty dang amazing. you can still hear people talk as the buds cancel out certain levels of frequencies.
Personally I really really love my Decibullz they're the first pair I tried and havn't had to try any others! they can be a little tricky to mold but you can redo it if you goof up a bit. and they're not too too obvious :)

You want something with a high decibel (db) cut. This link is to one that cuts sound by 31db. It still doesn't cut out all sound but it does help a lot.
I had the same issue with "nice" silicone earplugs. I eventually switched to these foam ones and the earplugs stopped backing out of my ears.
I think the others have mostly covered it but I'll put my 2cents in as a fellow tinnitus sufferer.
I didn't have much luck with "nice" silicone earplugs. It was a fight to get them to fully block my ear canal (even taking into account proper insertion technique) and almost without fail they would slip out of my ears from the vibrations and my own head movements within 30 minutes of riding. I switched to foam earplugs and have had signicantly fewer issues with them.
Wind noise is always going to be the loudest thing once you hit speeds of 40/50+mph unless your exhaust is ridiciously loud. Even with ear plugs in, the wind noise is very prominent or as you said not loud but not quiet either.
My tinnitus always flares up after riding even with the earplugs attenuating the noise level. I'm not an audiologist but I think it's a psychoacoustic effect where you have other noise and stimuli to focus on while riding but when you get off the motorcyle and take the plugs out you have none of that extra stimuli so the brain starts focusing on the tinnitus sound. It seems to always die down after a night of sleep.
It's possible to push your earwax further into your ear with earplugs, even so far as to touch your eardrum which can become very uncomfortable, muffle your hearing, and cause your tinnitus to become much worse.
Hope that helps some. Tinnitus is absolutely awful.
