I mean are you going to run a thermowell through a end cap on the sanitary fitting or have you found some cool bit of hardware that I ~~don't know about~~ just looked up and wish I'd known about a year ago.

I was wrong, it's an FKM seal, which will also do the job no problem.
3/4 Inch GHT Female x 3/4 Inch Male NPT. Clean the threads on the sprinkler with a small wire brush before screwing the adapter in. Don't worry about dope or tape since it'll probably be dripping at the hose connection anyway.

I’m leaning toward a cap and plug set for hoses of some sort as well. Hydraulic is the first thing to come to mind.

Can I just weld one end of this to the center of the keg, then the other end to my column?
I suppose I could get that pump, however I was under the impression I needed a two stage pump. That one does look sufficient though.
If I bought the stand alone unit, and the pump separate wouldn't I also need to buy the NW25 vacuum to hose flange adapter (3/8 inch)
And I would also need to go about finding out which brass fittings I need, vacuum hose line, and exhaust oil mist filter(cylinder atop the vacuum pump).
