- Make pasta.
- Depending on amount of pasta, make cheese sauce.
- 8 ounces of shredded cheese, cheddar with some swiss, go nuts.
- 1/4 cup whole milk
- 1/2 teaspoon of sodium citrate.
Add milk to sauce pan and put on medium heat. Add Sodium citrate. When the milk is hot, but not scalded, add the cheese and mix until it turns into cheesey goodness. Approximately 7 minutes. Pour mixture over the pasta.

Sodium citrate isn't some weird chemical, it's a salt used in food preservation and cheese making. You can even make it at home, just put "how to make sodium citrate at home" into youtube.

For what it's worth, the one on amazon got to Beaverton in 2 days. I think the shipping was like $2-3. Amazon was relatively cheap.
The butter crackers I ordered from Miami took a week and was like $10 for shipping alone.

whereabouts do you live? I'm trying to do some Googling for you but realized that would be helpful. I'm also always surprised how many margarines can be accidentally vegan... so you may be able to find something in portion packs that way..
