It's basically peanut butter with the fat removed, so it ends up being a powder. You then add water to it to make it a peanut butter consistency. Here it is on amazon, but you can normally find it in the peanut butter section at grocery stores. I think other peanut butter brands have started making their own version of it too!
Instead of making "peanut butter" with it, it's really good mixing into things like smoothies and sauces in its powdered form to give them a peanut flavor without all the calories. I make a sauce with it by mixing it with soy sauce, sriracha, rice wine vinegar, and a little honey for a yummy lower cal asian peanut sauce.

Protein is the hard one. Good low fodmap vegan sources of protein that I know of are:

Pea protein isolate (though some including me have trouble, ymmv)
Rice protein (probably brown rice protein)
Algae based protein, such as spirulina
Mycelium based protein, such as is in quorn (though most quorn products are neither vegan nor low fodmap)
Quinoa
Wild rice
There are some people who can tolerate more, such as well rinsed and pressed extra firm tofu, or gluten (which is quite high in protein), or canned lentils and beans. None of those work at all for me though. I'm not vegan or vegetarian, but I love the idea and want to support it as best I can.
I really like drinkable egg whites as a non-diary protein drink. They're odorless and flavorless and mix with just about anything. I like to mix them with PBFit/Naked PB: basically a powdered peanut butter. Naked PB will really answer the mail here as it has NO sugar, let alone artificial sugar.
With that, you have a diary-free/no artificial sugar protein drink.

One thing I discovered recently (thanks to Will Tennyson on YouTube) that I didn't know existed: peanut butter powder. It's easier to deal with when making shakes than regular peanut butter, and they have it at normal grocery stores.

So along with cocoa powder. you can look for a product called PB2. it is essentially dehydrated peanut butter. it could help with the texture issue mentioned by /u/anchasta. here is a link to the product on amazon (not a refferal link) for informational purposes. depending on where you live you can probably find it at target, walmart, whole foods or trader joe's etc
they also have a pb/chocolate blend might be worth looking into.
Thicken with defatted peanut butter powder. It has also the good stuff in peanut butter, including the taste, but is not literally 50% fat.
(Name brand is pb2, the chocolate flavor is also rat safe as rats are not sensitive to theobromine)
Peanut BUTTER is bad, but raw is Ok. small pet journal says that they do have anti nutrients, so don't make them a primary feed.
I used defatten peanut butter powder to give meds to my stubborn baby. It turned into a nice paste.

So in order to answer you, I had to: 1) walk into the kitchen and sample some on my finger three times. 2) ask my wife how she would describe the taste of Vegemite. 3) Google how others have tried to describe it. 😂
Without thinking my instinctual response as an Aussie is, it tastes like Vegemite! But I completely get that that is entirely unhelpful to someone who has never tried it.
To best try to describe it, I would say firstly it's savoury, quite salty tasting, almost a little metallic but not in a bad way, it's sort of beefy, but not, as it is vegan friendly, it's tangy and slightly bitter. It's flavour is strong, so you don't need alot of it when you are serving it.
Over here we are basically raised on the stuff from a very young age so most Aussies are fans of it. It's pretty much a pantry staple, never goes off, and is an easy snack spread applied on various carbs such as sliced bread fresh or toasted, large grain crackers/crispbread such as Ryvita or Cruskits, or fresh bread rolls like a knot roll. Almost always served with a layer of butter, margerine or Nuttelex. It's often used as a flavour layer with cheese in scenarios where the carb is toasted and served hot.
It can also be used in heaps of cooking recipes that you wouldn't think of immediately, there is a great range of recipe ideas on the Vegemite.com.au website.
I would certainly recommend giving it a try, just don't apply too much at first, start off with a very very light smear buttered fresh bread.

I am a peanut butter junkie. While I don't have the negative association with it that you have, it was important for me to remove it from my diet. At 95 calories per teaspoon, that's a LOT of empty calories.
I found solace in Naked PB. At 25 calories per teaspoon it's far more manageable. Mix two teaspoons (one scoop) with a bit of warm water, a bit of Stevia sweetener, and a dash of salt, and you've got a reasonable substitute -- enough, at least, to curb the cravings when they hit.

When I do long-distance backpacking, I take nuts, protein bars and peanut butter in addition to my core meals. We easily burn 5-6k calories a day (hiking 15-20 miles a day in mountainous terrain). Meals are mostly oatmeal and backpacking meals bolstered with potato flakes. I also carry one "survival brick" as a backup.

When I'm feeling hungry but don't have much in my budget for a snack, I just go for a cup of coffee instead. You can add 0 calorie sweeteners or syrups (I like these) to make them more flavorful. It kinda tricks your brain into thinking you ate something and coffee has just enough calories to stave off hunger :)

Those corn flakes are just junk filler food. There's minimal nutrition to them. You are consuming very little dietary fat. Dietary fat has 9 calories per gram, compared to carbs or protein which are 4 calories per gram. Very easy way to get in more calories that way.
I'd eat some sort of meat at lunch. You could eat it WITH the pasta, or eat meat and then an avocado or some sort of nut. The morning yogurt could be supplemented with some manner of nut or nut butter. You could also mix in a protein powder or something like this into the yogurt to make it more nutritionally dense.
Top the eggs and cheese with sour cream for some extra calories. Also another great opportunity for avocados. And consider mixing in some meat with the eggs.
For that snack, I'd look into some manner of nuts/nut butters.
