Get the 8BitDo SN30 Pro Plus. Easily my favorite controller, and it's cheaper than the Nintendo Pro Controller. I think the only thing the Pro has over it is HD Rumble and you can't wake the Switch from sleep with the 8BitDo.

8 bitdo sn30 pro plus, it says in the description that it's compatible with windows 7 and works well on switch. The only downside is that it can't wake the switch up from sleep.
This might get me tar and feathered but there is really no good reason to invest anything past perhaps $150 into rudder pedals until you are pretty satisfied in the rest of your setup and have had some time to make sure that this hobby is really something you will want to invest significantly into in the long term. Unlike HOTAS setups, rudder pedals don't have a huge raw functionality boost as you go up the price scale. They get more precise for sure and the more expensive ones will feel better or offer more specialized movement options but as a whole, a basic set of rudder pedals really is about as much as you will actually need. Anything beyond that comes down to personal preference.
One good rudder pedal option to look into is the CH Pro Pedals. They may not be fancy but they are reliable, practically bulletproof, and have a good reputation among long-term owners. I own a set myself and I have yet to have any issue with them even after a lot of heavy use. They won't be as fancy or perhaps as precise as the high-end stuff but after flying the Huey, Mi-8, the various WWII birds in DCS, and all the planes in Rise of flight (a very rudder heavy sim), I can't say that there is any real drawback or handicap induced by them.
If you get the CH pedals, you will have enough money to get a good HOTAS that you really want and will have rudder pedals that will easily last you until you feel the need to upgrade to something more expensive down the line. Spending $500+ on rudder pedals when you are not happy with your current HOTAS is not going to make things much better for you.
Just get one of these for $45.

You can use various buttons as modifiers (like shift or control on a keyboard) to get many different keybinds out of the different button combinations available. A quick search on the ED subreddit will give you many keybind options.
Other good HOTAS options that are a step up from that one are the Thrustmaster T16000M, the X52, and X52 Pro. I use an X52 pro and I love it.
I'd recommend buying it from Amazon instead, buying one with a case right now and it's only $65. Might take a little longer but there's no way I'm spending nearly $100 on a controller that I'll use like once a month.

I highly recommend this joystick and throttle for ED. It's a more reasonable price (was actually $35 on Amazon when I got mine), and there are enough buttons to control everything with the right control scheme. I got my Rift a couple of weeks ago and ED is pretty much all I've been playing since then.

Ultrawings has a virtual flight stick (its only control scheme before it added HOTAS support).
It is capable, but it is simple, and it is still occasionally frustrating to use even though it is only a little more than the virtual stick.
My belief is that a virtual HOTAS is possible but that it would not be very pleasant.
Unlike steering wheels (I still want a wheel with modern force feedback for under $200, sigh), a good entry level HOTAS is affordable. The HOTAS X is $50 on Amazon.
Those who are accustomed to super high end sticks would object to it but I've found it a great entry point for Elite, and likely far superior to a (nonexistent) virtual HOTAS.
There is good news. Sky supports all types of joystick devices that are MFI or Bluetooth. So I have cheap Lightning-to-HDMI adapter and can stream full phone screen on TV with sound. Also have Steelseries Nimbus gamepad to not look at the screen. This setup can allow anyone see the gameplay. Also PS4 and Xbox controlers can be used with Apple to play Sky so you can find one easy.
Yeah, I wish I had that one. I have this HOTAS X. There are a couple of other models with the identical setup for PS4 and Xbox One. They are all currently $75-120 on Amazon, so I'm just grateful for now that I'm only out $7.

Check out /r/eliteVR and /r/elitedangerous for guides. If you have never played I would recommend playing on a flat screen until you are comfortable with game mechanics. Flying is difficult and you'll want to learn before trying in VR. You can use a controller, which is preferable to kb/m in VR, but there aren't enough buttons so you'll have to bind some dual presses. If you enjoy the game enough, get yourself one of these throttle+stick, they used to be 50 bucks but they're scarce now thanks to ED and squadrons.

This is asked a lot, but I saw the Thrustmaster T-Flight HOTAS X, which was the previously recommended budget HOTAS is now out of stock on Amazon.
What are some equally good budget ones? Maybe a list could help.

I recommend the Thrustmaster T-flight Hotas X it’s is good for beginners.
There is also CH products pro pedals at $120 USD.
They use old school potentiometers instead of magnetic Hall effect sensors. I have had mine for over a decade. And just this year I had to take it apart and remove the main potentiometer and clean the lint out of it with some spray contact cleaner. It was pretty black. After I reassembled it all my jitter and slow response went away.
They have toe brakes. But, they are a bit narrow.
