I sat on my bed and used the dresser as a desk. Fucked my back up real good. Do not recommend.
What about an adjustable hospital type table? That should work over just about any chair and depending on the model could probably handle a monitor mount.
I've been really happy with a cheap medical table. Get one with the lower supporting beam at an offset to allow the front tire to sit further underneath the table.
I can easily get 2 laptops, keyboard, and a few drinks on the table.

When my wife had knee surgery a few years ago, she had to work from the couch and keep it elevated and that fits a keyboard, mouse and a set of HOSAS easily. It extends pretty far vertically and horizontally. Enough to fit over a queen bed.
Plus it's on wheels, so you can just roll it out of the way to store it when you're done. They have a few versions on Amazon. I just searched Over Bed Table and came up with a bunch.

Dark colored pillow cased. They are going to get stained. Depending on how much the incision oozes, you may want to change it every day or 2x daily.
Easy things to wear - maybe a couple of shirts that snap or button in front so he doesn't have to pull them over his head.
I bought a projection clock that shines the light on the ceiling, so if he wakes at night he doesn't have to look for the clock.

There are tables that are the type that they use at hospitals that you can move around. Here's one on Amazon. The height can be adjusted 28" to 40".

They usually have these "edge stopper" which i removed.
Whatever surgery is in question, a lot of people find a recliner to work best as far as comfort goes. There still be pain killers, and getting up if you've been horizontal can make you dizzy as well as making your muscles do more than is necessary. Getting up and down from the floor will probably feel like climbing mount Everest.
Move/fold the bed and have the recliner wherever you feel comfortable.
Inexpensive and indispensable.
Worry about redecorating later.

Otherwise my dad finds that he can reach his plate if he pulls up at an angle or sideways to the corner of a table or counter.
My parents moved into an “accessible” apartment. Ironically all the counters are lower which would work well for someone in a manual chair. But for someone in a power wheelchair, it’s not the best option.
How serious are you at triathlon? Reason I bring this up is that a physical job will take energy away from your training.
If you can work from home with just a laptop then you can literally train at the same time using a bike trainer and over-bed table. Not high intensity of course but decent volume work.

Ohhh I can help... when my wife had to undergo surgery, and later chemotherapy, she was in bed for weeks.... I bought this..
and I set up her computer with some cable extenders so her monitor and keyboard was on the tray, Her mouse she had on a large flat hard surface ( like a big book ) next to her.
She loved it so much she still uses it
