The dots help you write in straight lines, and make quick graph sketches that look good, but because they have low contrast with the page compared to ink there isnt the visual clutter of lined or graph paper.
The spellbook has flavor text in it, it describes the way the spell looks and what it does. My group has regularly argued that "X spell should be able to do Y thing because of what it says here" And the DM will usually look at the flavor text and say"Yea, that makes sense" I have one of These [Amazon Link] for my character sheet and spellbook. I don't actually have it set up yet, because I'm not currently a player as a spellcaster in any games, and I don't know what system I'll get to play a spellcaster in next.

There’s this one, it’s a traveler’s notebook style cover and while there’s no pen holder, you can slide a pen underneath the elastic on the outside. It holds three FNs perfectly, but if you want to hold two, use the extra cord to attach two notebooks together, then slide one notebook underneath the elastic in the cover. When closed, it’s pretty slim.
I have one, I wanted to try out a traveler’s notebook style cover without spending too much and this got the job done. The leather does scratch but it developed a nice patina over time. I gave it to my boyfriend when he got FNs and he’s been happy with it.
I’m a fountain pen nerd and love notebooks.
I think you might need to try Rhodia Dot Pads! They’re bound at the top, not the side so flipping to the next page doesn’t feel quite as wasteful. They’re made with very high-quality Clairefontaine paper and are a dream to write on!

I like this long Rhodia pad. It's cheap, paper is amazing, and I really like how the pages are longer than normal. Sounds like it would be great for taking notes!

Not really sure what SBAR is as I've never heard of it but I found these the other day. I've used the "write in the rain" notebooks and a few others but this is so far pretty good. I know there's a notebook on Amazon that follows SOAP format but I'm not a fan of SOAP. Check these out.

I carry a pen and a tiny lineless notebook in my bag and I keep a small size sketchbook by my bed at night and by my laptop by day. I use lineless and sketchbooks because I'm a sloppy writer and I need room for mistakes. I feel like lined paper confines me. I'm a weirdo writer...
Personally, I find writing on your phone can really stop the flow of your writing. Same with writing on your computer. For the best free flow of writing, paper is best in my honest opinion.

Afraid not. My girlfriend got it for me for Christmas, knowing her, she ordered it off Amazon. Doing some looking, I think it's this one in the dark brown color.
I'll second the recommendation for getting better paper. I didn't think it'd make that much of a difference either, and than I picked some up and it really made the nib feel smoother and the ink behave better. A Rhodia dot pad can be had for less than 8 bucks. Yes, it might seem like you're "throwing money away", but if that's really how you feel, then why use a fountain pen anyway?
engineering paper is crappy paper. I understand that I am a paper snob, and that compared to a lot of paper, brands like tops don't make the worst paper, but that doesnt mean its good paper. I use rhodia dot grid pads
The dot grid system allows you to draw strait lines, reference basic angles from the paper, and align your text, all without the clutter of traditional graph paper. It is pretty similar to working on engineering paper, except both sides are usable and clean.
If you think 12 bucks for 200 sheets of engineering paper is ridiculous then you might have a minor heart attack looking at rhodia paper (roughly twice the price per sheet on amazon), but I just love using good quality paper, and how it feels and how it takes ink without feathering.
For me it was finding a type of notebook that worked for me. I tried a Leuchtturm type notebook and didn't like it (unpopular opinion, it seems) because I'm a bit of a perfectionist and not being able to remove pages cleanly bothered me. Also as a lefty it wasn't the most comfortable.
Then I tried a spiral-bound notebook from Muji and the paper was great and I enjoyed it for awhile but it still wasn't quite flexible enough for me.
Eventually I found out about the discbound system and fell in love with it. Super customizable and flexible. Pages can be easily removed and reordered. You can also take the pages out if you want to write without the discs getting in the way. I love it. I also am able to put in dividers to make different sections for even more organization which is a huge plus for me. I use the cover from the Martha Stewart collection and then have a discbound punch that I use to punch sheets out of this notepad from Rhodia. It works perfectly for me and keeps me motivated because it fits all of my preferences.
I just ordered a bound Rhodia notebook last night (so it isn't here yet), but looking at the non-bound ones probably similar to OP's they were around $10 on Amazon.

I've used Ecoqua notebooks with success. They can be found on Amazon . They are comparable to field notes paper with a dot grid pattern. You get 4 notebooks with more pages than field notes for cheaper than a 3 pack of field notes.
Another option is to use index cards. Either clip them with a small binder clip or use a card holder like this one. I got mine for ~$10 on eBay. I cut my own cards from card stock. It works out to be 10x cheaper than field notes and I never have to carry filled and no longer useful pages.
