Haven't read them yet but just caught up with The Magicians TV series and am on the waiting list to read the trilogy of books the show is based on. Might be a bit more campy than you're looking for (think Harry Potter for adults) but I've found it entertaining and there's definitely strong elements of time travel / time looping.

Not really pirates, but alot of the story centers around sailing. He wrote this series as a duo. Of Shadow and Sea (the first book in the other series) shows an alternate viewpoint in the same story and centers around assassins.

The real draw of The Magicians its depiction of how someone who suffers from depression and persistent dissatisfaction with life would really react when their wildest dreams come true.
In most fantasy fiction, magic is what saves the protagonist from a dreary and bleak existence (e.g. Harry Potter, Narnia). But for the severely depressed Quentin Coldwater, depression isn't something that can be erased with a magic spell.

Like you, I wasn't a huge fan of the NOTW, though I do love ASOIAF. Before buying, you should probably look through a writing sample (e.g. on Amazon), though I don't know if the first few chapters do Grossman justice.
Edit: I've just read your other comment saying you're new to fantasy. In that case, you may want to delay reading the Magicians unless you are familiar with the typical fantasy tropes. The Magicians is remarkable, imo, in how it inverts and corrupts so many of the genre's beloved tropes. If you're already familiar with the major mainstream fantasy (Harry Potter, the Chronicles of Narnia, etc.) though, then you should be all right.
Check out The Traveler's Gate . It's like reading an anime. High-octane, high magic action that just. keeps. escalating. Guilty pleasure for me.
I'm surprised no one has mentioned The Magicians by Lev Grossman. The transformations are not major points, but there are some really fantastic scenes throughout the whole trilogy--plus his writing and characters are just fucking awesome.

I'm a big fan of The Magicians trilogy. Bit more on the adult (in terms of gore/sexual stuff) end of the fantasy genre, still wonderful though
