Look into the WEN 56200i. It's currently $457.92 from Amazon and Walmart, but it routinely dips to $390 or so on Woot! every 1 or 2 months.
It may not be a Honda, but it's pretty quiet and is much cheaper. No issues so far running ethanol-free gasoline.
What the other guy said…. This will cover most of your grilling and smoking needs, and will last decades if you buy a cover for it. Amazon might have free same day shipping too if Home Depot/Lowe’s doesn’t have it in stock

Alternatively, save yourself the gas and the wear on the motor and buy a small generator. You can get a 700W generator from harbor freight for 100 bucks. Check around Amazon and you might find something that will better fit your needs or more easily integrate into a skoolie. My major concern would be in trying to get a larger gas tank for running the generator. If you're staying in one spot for a long time, a half gallon tank that runs for 5 hours ain't going to cut it. Just keep in mind that I linked the cheap stuff. Honda makes a 2000W generator that's $1000. The higher wattage and longer running generators can only go up from there. Personally I'd be inclined with the load you're expecting to get the cheapest, quietest regular unleaded generator you can find and figuring out a way to hook up a larger gas tank to it.

I had a Honda EU2000i for years, I highly recommend against it. It has an inherent flaw that is a fucking pain in the ass. It was quiet though I'll tell ya that.
The fuel shut off is also the kill switch.
What does that mean?
It means, the carb stays full of fuel that evaporates and leaves shit that clogs the jet. Every god damn time I went to use it, I had to pull the carb, clean the jet, otherwise the RPMs would surge up and down.
Could I have modified the factory fuel switch so it wouldn't shut off the engine? Could i have installed a fuel petcock? Sure, but for $1000 I was pissed and sold it.
When the need arises I'm just going to Amazon Prime a Wen 2000 which is a Yamaha clone for $450. For $450 I have no problem modifying it.
Weber Charcoal, with the ash can on the bottom (not just the ash plate). It's pretty great as a basic grill. Edit: Looks like $150 on Amazon.
As far as the charcoal time vs gas thing. I use a charcoal lighting tower (type charcoal tower into amazon or something. Weber has a good one of these too). Honestly, by the time you light the grill up, go back in and assemble whatever it is and go back out, the coals aren't too far off from being ready. And the flavor is way WAY better. I can instantly taste what a person has cooked on. And not just in a 'charcoal tastes better' way, but I can also taste the propane. (As a side-note, I can also taste who used a charcoal tower vs who used lighter fluid, because I can taste the lighter fluid.) Even my wife, who is not into grilled food or any of it, prefers to eat things I've made on a charcoal vs when we go elsewhere and they used a gas grill. So if someone is comfortable with using charcoal, I really recommend it. But to each their own.

I'm thinking about upgrading my smoker. As it is, I'm using a propane grill that I modified. Hole on the side (air intake) and hole on the top (exhaust). I've had some great successes but it's getting old and dirty.
I'm thinking of a Weber Kettle. Thoughts?

Portable generator to run appliances and small space heaters can be had for a lot less than 20K. 20K would be for a large pad-mounted whole-house backup generator with an ATS. You can do a larger portable with 240VAC out and a manual transfer switch or main breaker interlock and external connection point on your house for probably $2K or less that will let you run the water heater or HVAC plus lights, chargers, fridge, etc. If you just want to run appliances then this one is a good deal currently:

Portable generators are not meant to run in the rain nor are they meant to sit out in the elements. Electricity and water are not a good mix and small engines and generators corrode if they are exposed to the weather. The only way they can live outdoors is either under some sort of running tent when they are running and stored indoors otherwise or else in some sort of permanent weather tight enclosure or shed. You will have to budget separately for that in addition to the cost of whatever generator you buy. The only exception are the permanently installed standby generators that already come with an enclosure (and are priced accordingly).
If you already have a jump starter, just use that to power the compressor too. You can get a cigarette socket adapter for the jump pack if it doesn't have a socket.
That little inflator has a tiny motor and any generator is going to be big enough. The most popular (for a good reason) small generators nowadays are the "2000W" class inverter generators (actual output 1600w continuous) like this:

People generally feel Honda makes the best inverter (quiet) generators and that is probably true. A 2000w Honda is the gold standard in quiet generators. You will need more like 3000w to run an AC unit or a starter kit on a 2000w generator.
I personally daisy chain two Wen 2000w generators together with a parallel kit when I need the AC and just bring one when I only want to make sure batteries get charged. Owned them for about six months now and have had no problems. Make sure you look up generator maintenance if you get one you have to change the oil much more often than you would guess.
I guess noise is subjective but a modern inverter gen is a LOT quieter in my book.

For emergency backup use you are never going to hit 5000 hrs nor wear out the inverter. Horses for courses - for all day every day construction use your friend made a good choice for his application but emergency backup is a different application. Noise and fuel consumption are more important than longevity for that application.

I have a 100w one on my campervan, but its not exactly portable, I mounted it to a roof rack, it keeps a mini fridge, laptop, TV and diesel heater running along with charging my phone daily, its connected to a 12v 110Ah Leisure battery that has an invertor for the 240v stuff, I try to avoid 240v at all costs as its overhead is large on the invertor.
Paid £100 for it in 2020 so its gone up a little since at £160 for 100w, budget another ~£100 for the battery, would you save the £260?

Connecting this panel and charger directly to the batteries would be the simple and cost-effective route.
It ended up revegging because my cat stepped on the timer so the light was turning on in the middle of the night. I still smoked it but it was super harsh and it looked like shit and wasnt very strong. I've used this light for about three grows now. I like it, never had any issues with my plants (due to lighting at least lol)

Hey I use gavita 1000w lights but I did experiment with some of the cheaper led’s a few years ago to see what they were all about and I would recommend this one if you are only growing 2-4 plants.

A small tent could definitely be useful to keep whatever area you’re growing in clean and unaffected by the frequent watering. Also will help with reflecting the light off the walls. Nutrients are up to you. I use house and garden but made a few tweaks to the line up. For example I don’t use shooting powder, and instead use “peak” by aurora nutrients. But any well known nutrient line should do just fine.

I got it, 25 feet of rubber tube (which I cut to size) and a pump for around $325. I see that it’s $400 on Amazon right now, but shop around and you should be able to get it for $300. Works wonderfully to keep my tank at 63 degrees. Fans are a good suggestion, but I found they only worked if I kept my room around 68-70 - which meant $200 electric bills all summer long. The chiller was a great investment - my current summertime electric bills are like, $70/month.
You do not need to get a probe chiller because your tank is small. Get one if you want, but don’t feel like you’re limited to that style.
Buy yourself a good gas generator. Even though we own a Model 3, that's what we did a few years ago. When the power went out in our neighborhood due to a huge windstorm, we ran out fridge, freezer, gas heater, computers and wifi off the generator.
