It is only necessary to weigh things down with sous vide if they're floating. If you use a ziplock bag you can get most of the air out using the water displacement method where you put your food in the ziplock and mostly seal it. Then you dunk the ziplock bag into water almost up to the seal and the water pushes most of the air out.
You'll never get all of the air out though with that method so a cheap foodsaver is a good idea. Also some foods (like veggies) give off gas as they're cooking so they still need to be weighed down. I actually have a pot lid organizer from IKEA that is great since it can keep your food separated for better water circulation but it can also be flipped over to act as a weight when necessary. As you can see from the Amazon reviews, this is a pretty popular alternate use. It probably goes without saying but head on over to /r/sousvide if you want to see what we're up to!
These pot lid holders are freaking amazing. They have saved so much space for us. As well as these cord labels when you are setting up your entertainment unit.
As for not on amazon, I got a blanket ladder for Christmas and I didn't know how badly I needed that in my life until I got one.

I bough this rolling cart from Michael's for $29.99. They have other options with more space but this one fits everything.
I bought this organizer set for my apartment's kitchen but my roommate didn't like it, so I used it in my cart and it works perfectly. I wish I had a picture, but basically, I have the one with more slots on the top shelf of my cart to hold sketchpads and canvases. Then on the second shelf, I have my box of acrylic paints next to the second organizer– in the smaller slot I have my smock rolled up, and in the bigger one I have all my tools (watercolor pans, small box of gouache paints, etc) lined up. I don't completely remember what's on the bottom shelf but I know it's my paintbrushes and something else. Hope this helped

I let the condensation drip back into the pan/pot and then put the lid upside down wherever I have free counter space, or in the sink if need be. In your case, you may want to look into a lid holder that lets you store the lid vertically on the counter. Here's a link to a random one, but there are various other styles and price points available if you search online.

I use a bamboo dish rack and yarn wrapped around toilet paper rolls for my C2C blankets or any other color work projects.

Turned upside down it helps stop floating and if you cook in bulk it keeps things spaced out well too.
I flip this upside down and it holds things down and keeps them apart. Especially useful for things that float/move or bulk cooking.

A lot of people use this. I have 2. Sometime I put one on top to stop floating. I love it. It’s super easy and fast to accordion them more open or closed changing the distance between prongs.
Edit: if you have an IKEA store where you live they’re cheaper at the store, at least where I am, they are.
So for clutches I use this expandable holder which I think is actually for cooking lids (which I use one for as well) and its great for my clutches. I'll link the one I have from ikea but there are a TON that work just like this!
Generally you want good water circulation all around the meat. It looks like your steaks are making contact with the bottom of the pot. It'll still work because the pot also heats up, but it's sub-optimal.

You can install/remove any of the stands, they screw in. No plastic parts, all stainless steel. Pretty cheap compared to other options.
In your case, I would have arranged the steaks 90 degrees rotated in the bag so you get good space between them, and then each steak can sit in it's own part of the rack, with the space between them helping bridge the gap. That would still only use one bag, and you get excellent water flow around each steak.
We use the IKEA VARIERA in our 12 qt and can position the Anova wherever we want and haven't had any problems with food floating. Just pointing it out, too, because cheaper and Prime (though shorter "arms"). Technically even cheaper if you have an IKEA, but leaving the house...

This is a good (cheap) product that will do the job for multiple items at once. Obviously that is not it's intended use, but it seems to work just fine.
I've had the same item for over a year now too and I don't think it has any issues with rusting at all. At least no issues that I've noticed at all. I ordered this from Amazon.
I am a big fan of this guy since it is cheaper than the purpose made things (although the one you linked is a very reasonable price) and adjustable. IKEA product but Amazon link for people that don't have a local IKEA.
